Our last 2 weeks!

Here's the Spreadsheet of Fabulousness

Only two weeks to go!

I'm feeling that a lot of us are struggling. But it's all about how to integrate what we're learning about low carbing and how that fits with day to day eating/meals.

Above all, though, who could possibly say that the meals we're eating could not be the mainstay of family meals?!

Let's see this last fortnight as a challenge: what's your most enjoyable/family-friendly meal, that they would never realise was a 'diet' meal?!!!

Yes I have been improving the water a lot but the body is clinging on to it!

Oh well at least it is sunny!

Awwww thanks all. I feel quite tearful at all the lovely and genuine people on here. It is going to be tough, and I have/am considering not going @ditavonteesed (my friend would tell me I am better than all of them and not to go - even his wife he told me never to forgive because she was so awful to me, but after he died we met and she apologised and said it was one of the biggest regrets of her life. People do things when they are sick with grief and I know from my own past behaviour when I've been ill, that you can really act like a different person and I always hope people would forgive me, so I had to accept that and move on). But then there are some people there I do want to see and I do want to hold my head up high like at the funeral. There was one particular person going round telling people that my children were my friends kids Shock and other horrible lies about me. Some people really struggle with male and female friendships (we'd been friends since primary school) and she was also the one pouring poison in his wife's ear about uninviting me from the wedding because there was 'something going on between us'. It certainly wasn't the right time to say anything to her at the wedding and I just remained dignified and then left early as she got drunker and more abusive, but I am prepared if she says anything this time to challenge why she thinks she has the right to be so vile.

Love the peonies @Thinnerlikeachickendinner mine are going off now. I had pale pink ones in my wedding bouquet. They are one of my favourite flowers.

Nice wheels @prettybird I don't know anything about cars and I hate driving but yours looks very swish (ours is a skip on wheels covered in bird crap from the massive protected tree on our drive).

My pink Peonies are almost gone and my white ones haven’t come out yet. The weather has messed up their routine I think.

Thanks all for being so indulgent of me. I feel a bit foolish after my tantrum yesterday. I’ve been festering on the 19th for weeks and once I said it out loud (or typed it on here at least I haven’t mentioned it in to) it doesn’t seem such a big deal as it did before.

Been to Sainsbury’s today and they had loads of meat discounted so my freezer is full and I’m now meal planning and watering my garden - kids are with their grandparents and H is out tonight, so it’s mani and pedi and fake tan (to cover my burnt feet from the weekend) night and something on Netflix maybe - all suggestions welcome?

@MrsKoala - sounds a very stressful event on 19th. I’m really sorry about the loss of your friend that is hard enough to deal with without the politics of others. Glad you’re feeling a bit better about it today.

Like the sound of your planned evening sounds perfect. Interested what people suggest for Netflix. I need some ideas too!

Has anyone managed to find a decent low carb bread recipe? - really fancy a nice seeded loaf & would like to make rather than buy the SLC products.

@MrsKoala I know you have a stressful event on 19th but concentrate on losing weight for your own health rather than what they think and you will feel better.
I get real bad anxiety thinking on going to parties even before covid19 so I just stopped going except for with my DH and teenagers.
We are going out Friday for DH birthday so trying to be extra careful before Friday.
I want to be able to enjoy a dinner on an occasion without thinking about the 1lbs it will add.
My aim after bootcamp is to keep up with not having cereal bread potatoes pasta rice and sweet stuff . But an odd dinner out I might have some off the above.

Netflix Recommendations I liked Virgin River, Sweet Magnolia. Cheapstake Shores.
Does anyone know anything similar to these. I start so many and just don't enjoy them as much.
@BIWI hope your doing ok and got your health apt sorted.

The other one I have saved is this but again haven't had chance to try it yet:

I've realised I'm properly gluten intolerant so I threw out my last SLC rolls at the weekend (sob!) so the motivation is there now!!

L: bbq'ued chicken breast and bacon salad with lots of hm vinaigrette
D: a delicious invention!! Will post on recipe thread

Pack of cod loins cut into large chunks and salted
Pack of prosciutto
2 x Large handfuls kalamata olives
Large handful sun dried toms
Chilli would be nice but I didn't use it
Garlic purée
Mozzarella ball torn into shreds

Stone olives and chop together with Tom's to form a chunky paste, stir in garlic purée and chilli if using
Smear onto slice of prosciutto
Couple of blobs of mozzarella
Roll code cubes in prosciutto to make parcel
Place on baking tray drizzle in olive / flavoured oil (I used basil)

Bake in a hot (220) oven for 20 minutes.

I had with garlic buttery spinach and leeks and it was bloody lovely. I think creamy / cheesy leeks would have been even better.

DD made fish fingers with another pack of cod whilst I was doing ours and they were a huge hit too. Chucked some wedges in the oven just before the cod for the carbies.

Thank you @FusionChefGeoff let me know if you do bake them & we can compare! I have just ordered the physillum husk but need almond flour. I made a loaf LC loaf before with pumpkin seeds but can’t find the recipe. It was nice (not amazing) and very dense - I’d like to get a bread with crunch - does that even exist LC?

Dinner at yours sounds lovely! Cod & prosciutto parcels 😋 I did my failsafe - frittata but need more ideas other then courgette?! Any suggestions?

Almond flour would be better. I have a recipe for a kind of scone and it is pretty gritty with ground almond.

Holland & Barrett do it.

Had a strange experience at the gym yesterday. I have a round of a few weight machines that I regularly use, and it felt exactly like someone had recalibrated them all to make them loads lighter. The little slabs of steel went up and down like slabs of aluminium. It can't be that my muscles have got so suddenly stronger. It must (surely?) be that my body was processing its energy much more effectively? If so, how, why?

But, contrariwise, I am having relatively frequent muscle cramps at the moment, and sometimes they don't just ease up after a moment of stretching or massage, They hang around. I drank some salt water yesterday to try and rectify this. I'm finding it hard to adjust to the idea that salt may be something I should seek out rather than avoid.

I wish I understood each part of what was going well and what was going badly in my body's little journey.

No peonies here but came back from the country yesterday to find the aliums looking rather lovely.

Does anyone have migraines on here? I've been feeling quite migrainous for the last two weeks and read that a fatty diet could be a trigger. There are so many potential triggers that is always hard to pinpoint which one. I also suspect hormones as am sure I'm perimenopausal.

Yesterday's food.

B 2 poached eggs asparagus w butter

L: ham& cheese.

D: home made burgers cheese aubergine & mozzarella grilled sandwiches. Lettuce cucumber & sauerkraut.

My peonies are still in bud but I have 5 blooms preparing to burst into flower.

@Stokey Menopause and peri-menopause are a massive trigger for migraines especially if you have suffered from migraines at specific points in your monthly cycle.

@Stokey those alliums are gorgeous. Something has eaten mine this year. I had buds last week and this week not even any plants. I suspect the dog.

Went to Aberglasney on Tuesday and they had a magnificent display of alliums.

Thanks for the best wishes @Andi2020 - I haven't seen the GP yet. I'm fairly sure I know what the issue is - although not what caused it. (I'm fairly sure that over indulging in carbs and alcohol did not help!). I will make an appointment at some point, but all is well right now.

Lovely car @prettybird! Envious. We need a new car but DH is of the mindset that we should always run our cars into the ground

@BIWI : to be fair, we did drive our last car into the ground. It was 13 years old and even though it passed its MOT last August, our mechanic was surprised didn't think it should have Shock and told us to get rid of it as soon as possible Hmm. He'd even started refusing to "niggly" work on it (like the electric windows only intermittently working and the ventilation system only working on maximum) on the basis that it would cost too much to be worth it. Confused

We are nearly at the end of driving our car into the end! Trying to choose a new (i mean new to us!) replacement at the moment, but might just put it off for a year. On the other hand newer cars are cleaner - it’s hard to know what to do!

One pound of the weight has gone. Had a weird day as was out last night - breakfast: cheese, lunch scrambled eggs and then some left over red cabbage with butter and sour cream, dinner Caesar salad no croutons.
