veggie chilli: I combined the following recipes:

Not really sure about the exact quantities because I've never written it down before but I have made this many times and it is always a huge hit! I think this is enough for 4 if you serve it with rice or something else.

1 Large Onion
2 med-large carrots
2 peppers (I always prefer red)
400g tin kidney beans, drained & rinsed (or whatever kind of beans you like)
500g tomato passatta
pine nuts
cashew nuts
garlic
tabasco
chilli puree
cumin
Honey
Salt

-Finely chop the onion, carrots & peppers
-Heat the olive oil and sautee onions & garlic for a few minutes until soft (don't brown)
-Add carrots & peppers for another couple of minutes
-Add chilli puree - start with 1 tsp then add more to taste later (I'm hopeless with fresh chillis and don't like the taste of chili powder, I find the puree the best)
-Add passatta, kidney beans, pine nuts, cashew nuts (not sure quantities for nuts - maybe 1/2 cup each?)
-Add a few splashes of tabasco, maybe 2 tsp cumin and a couple of teaspoons of honey and salt as needed
-Cover & simmer for at least half an hour although it's fine if it cooks for longer- sometimes it's even better the next day! Taste occassionally to adjust the spices as needed.

1 tin red kidney beans
1 TBSP oil
1 large onion, chopped
2 cloves garlic, chopped
1/2lb chopped mixed veg (carrot, peppers, celery, mushrooms)
1/2 tsp dried basil
1/2 tsp ground cumin
1/4 tsp cayenne pepper
1/4 tsp chilli powder
1 tin chopped tomatoes
2 TBSP tomato puree
2 oz bulgar wheat
1 - 1 1/2 pts vegetable stock
juice of 1/2 lemon
salt and pepper to taste

heat oil in large heavy-based non stick pan. Gently fry onions and garlic. Add the chopped veg, beans, basil and spices, Stir well and cook for 5 mins. Add tomatoes, puree, wheat and 1 pint of stock. Bring to boil, cover and simmer for 30 minutes. Then add lemon juice and salt and pepper (and remaining stock if necessary). Cook for a further 20 minutes.

OK so I swapped the squash for 3 litres apple and 3 litres orange juice for the same price.
