Bella - as I'm a completely non original cook it's straight out of my new cook book (Fay Ripley)! - but here's what it is (carefully avoiding direct copying to avoid copyright rules!)

6 chicken thighs, large chopped onion, 150g pancetta cubes, 2 garlic cloves, 280g brown basmati rice, 700ml chicken stock, 3 sprigs thyme, juice of 2 lemons, 250g of frozen broad beans, salt & pepper

Oven at 220 (or 200 fan). In a big ovenproof casserole brown the chicken in olive oil, take out and put aside and fry the onion & pancetta. AFter a few mins add crushed garlic for just a min or so then add the rice and coat it in the bits. Then add the chicken stock, lemon juice, thyme, broad beans and seasoning...bring to the boil, bung in the chicken and put in the oven (with lid on) for about 50 mins (I left it for an over an hour and it was fine).

Totally yummy - everything I'm trying from this book seems to work!

p.s. - you can add lemon zest from 1 and a half lemons but I didn't have unwaxed lemons!

Thanks hells, I have copied that over into a word doc so I can do it next week - just need to get some brown rice and broad beans.

If you wash the lemons under the tap and give them a good rub, you will take the wax off and be then able to zest them.

Have got really motivated about healthy eating today. I am feeling a bit grotty (horrid cold thing) and i just want healthy stuff, plus Dh and i are going to start ttc soon so feel that i need a healthier lifestyle (although i am going out twice this weekend )

Am watching Masterchef whilst DH is doing the ironing in the kitchen and kicking ass upstairs as the boys are messing. Someone has been in our bedroom (above the sitting room) I guess it is DS2 and I heard a bang, I think he must have got my dressing table chair and stood on it to look on the top shelf in my wardrobe and he has fallen off. I save some of their pocket money every week so it does not all go on sweets [mean mum emoticon] and me thinks he has gone looking for it...

I hate food shopping Norma, makes my hyperventilate. I always get mine delivered. I will nip in to the supermarket for a couple of bits but that is my limit.

Evening all, just popping on as madly packing for holidays tomorrow

Had a real rollercoaster at the gym today when i stepped on their scales and was only 11 stone [woo woo!!!!!]. I then went home and checked on our 2 sets of scales and determined sadly that i am at 11st 9. Bugger

Went out for lunch and had gammon, eggs and chips. Was truly delicious and worth every calorie IYSWIM. Wine in lieu of tea

I see Gordon Brown is a guest tomorrow, wow! Love him or hate him, it's a great one for MNHQ to pull out of the bag huh!

Today I had chicken soup for lunch and macaroni cheese. I got some of those probiotic yoghurt drink thingamys to try as they were on offer in Asda so will try one tomorrow.
