I have made this cake (with Haplessmale's suggestion incorporated) about a dozen times over the last couple of months, it's gone as soon as it's cooled. Absolutely fabulous and so far idiot-proof . Made a double layered version with cream-cheese icing and WOW - thank you all!

The cream cheese frosting:

125g unsalted butter, softened
250g cream cheese
1 teaspoon vanilla
4 cups icing sugar, sifted

Beat butter, cheese, vanilla till light and fluffy (3 mins. approx.)
Gradually add icing sugar, keep mixing till incorporated.
Refrigerate for 1 hour.

For the cake recipe given above, (i.e. if you're just doing a single layer cake), you may want to half the icing recipe.

I've been further reducing the icing sugar quantity and adding a bit of drinking chocolate to make it chocolate cream cheese icing.

That recipe is amazing! My chocolate cakes never rise properly and end up a gooey mush but this is brilliant! My whole house smells of delicious chocolate now, even though I baked last night.

I just made @boogeek 's recipe as fairy cakes. Baked for 12 minutes at 170C and they came out perfect. Thankyou!
