What's your absolute favourite way to eat mushrooms?

I love mushrooms. I want to eat more mushrooms.

Bonus points if your suggestions are veggie and gluten free, but share anyway even if they're not.

Oh, I should start:

Chop them up. Saute with spring onions.
Add crunchy peanut butter, sesame oil, coconut milk, brown miso, soy, and a dash of cayenne.
Serve with rice noodles.

I also like them sauted with shallots, garlic, sherry, a bit of heavy cream and loads of black pepper. Good with rice.

I like them raw in a vinaigrette and with plenty of parsley. But obviously not very often!!!

otherwise sautéed in plenty of butter

I love a risotto, but Ds can't eat cheese so I rarely make them.

I bloody love mushrooms. Thanks @mrstambourinewoman for the recipe linked above, will be having that in the winter.

I like a big flat mushroom grilled and topped with fried red onion and Stilton (or any cheese really). In a GF roll it’s like a burger of mushroomy deliciousness.

Whenever I have some that need using and I just quickly fry them in big chunks with plenty of pepper til they’re really well done, and have them on toast, I remember how tasty that is.

Sauté, mix 1 part tahini x 3 parts water and a pinch of stock powder, add to pan, bubble for 1min till thickened (add more water if needed)

serve on toast (I like pumpernickel) - really quick lunch!

I love a basic cheese, ham and mushroom omelette.

Pan fry the chestnut mushrooms in plenty of butter. Chuck in ham and cook for a min.
Add egg and then top with favourite cheese

Grill portobello mushrooms with cheese

Fried with bacon
In cream with tagliatelle
Just in everything. I love them.

Stuffed mushrooms, cream cheese, sunflower seeds and tarragon.

Equally, stroganoff is always delicious to me.

Saute with salted butter and garlic, then add creme fraiche or double cream and bubble briefly till somewhat thickened, then add a soft herb. I like parsley or tarragon. Use as a pancake filling (or in Staffordshire oatcakes, or on savoury waffles, or just on toast).

I add mushrooms to anything I think will be good with them. I always cut them into large chunks/pieces so that they don't disappear after cooking.

portobellos or similar large mushrooms:
stuffed with sautéed shredded courgette and garlic/basil/spring onion + cheese and grilled
OR
sliced long and sautéed in the pan after cooking steak; then sprinkle with chunky sea salt and pepper

One year, for Christmas, DH gave me a mushroom cookbook and cooked all the recipes for me!!

Field mushrooms, stalk removed, finely dice stalk, red onion, courgettes and half a grated apole and gently fry. Combine with crumbled blue cheese and some fresh parsley then use to stuff the mushroom. Bake in the oven.

Two ways:

Lightly fried with balsamic vinegar, black pepper and cream, then they go on sourdough toast.

Or I take the stalk out, and put ketchup in the cap or mayo and eat it raw 😶😅
