What's your absolute favourite way to eat mushrooms?

I love mushrooms. I want to eat more mushrooms.

Bonus points if your suggestions are veggie and gluten free, but share anyway even if they're not.

Oh, I should start:

Chop them up. Saute with spring onions.
Add crunchy peanut butter, sesame oil, coconut milk, brown miso, soy, and a dash of cayenne.
Serve with rice noodles.

I also like them sauted with shallots, garlic, sherry, a bit of heavy cream and loads of black pepper. Good with rice.

So you’d rather die than eat mushrooms?

Garlic cream mushrooms baked in the oven

Fake steak sandwich. Portobello mushrooms fried in garlic butter, like steak with salt and pepper. Decent bread(sorry. Your least horrible gf option.) with decent butter and mustard. Soak up all the lovely juice.
Dh likes them stuffed with boursin, duxelle the stalks and mix it in the cheese. Stick in airfryer.

Remove the stalks, put a scant pinch of salt in each cup, and pan fry until the outside is golden and the inside has filled with juice. Then carefully lift off the pan, one at a time, without spilling, and pop them straight in your mouth.

In our house, this is referred to as “doing mushrooms” as it induces a state of ecstasy.

Also excellent served on hot buttery toast that’s been pre cut into convent quarters so you can balance each mushroom on a piece. Don’t try cutting the toast with the mushrooms on top or you’ll loose some of the lovely salty juices, which is a serious food crime.

Intentionally tipping out the juices before eating the mushroom means we can’t be friends.

Baby button mushrooms
in a minty vinaigrette, left to macerate for a few hours. Has to be jar mint sauce, white vinegar and a bit of sugar and lemon.

Sauteed in butter on toast, bit of cream and pepper.

Sauteed and in an omelette.

Risotto - I love Delia’s oven baked wild mushroom risotto with sherry or marsala in it.

Stroganoff with a decent bit of steak.

In a brown savoury sauce with pork schnitzal (jagersauce)

Mushrooms in peppercorn sauce served on garlic bread is my absolute favorite thing to eat.

Mushroom and spinach orzo - think it’s from BBC good food.

Really easy, cook mushrooms in butter, add onions, orzo, stock and when almost cooked at in some cream or crème fraiche and spinach

Cowboy omelette

3 large eggs
1 tbsp butter
¼ cup diced smoked ham
2 tbsp sliced button mushrooms
2 tbsp diced onion
2 tbsp diced green bell pepper
⅓ cup shredded cheddar cheese
Salt and freshly ground black pepper

You can saute the veg first and use as a filling with the cheese towards to the end of cooking or what I do I beat it all together and cook on low until just set and then add the cheese and fold. Serve on toast or with a salad.

Mushroom stroganoff is a family fav here served with buttered noodles

Mushrooms, onions of choice, garlic, parsley sauteed and finished with a heaped tbsp of Phillie served on toast or mixed with pasta for lunch or my fav over mashed potato and served with steak
