What's your absolute favourite way to eat mushrooms?

I love mushrooms. I want to eat more mushrooms.

Bonus points if your suggestions are veggie and gluten free, but share anyway even if they're not.

Oh, I should start:

Chop them up. Saute with spring onions.
Add crunchy peanut butter, sesame oil, coconut milk, brown miso, soy, and a dash of cayenne.
Serve with rice noodles.

I also like them sauted with shallots, garlic, sherry, a bit of heavy cream and loads of black pepper. Good with rice.

I love a risotto, but Ds can't eat cheese so I rarely make them.

Cheese hater here but I LOVE risotto! Can’t really order it in restaurants so I make them often, mushroom is one of my faves! I take my portion out (& grate over truffle if I have any as the others hate it!) then add Parmesan to the pot for the rest of the family.

Fried in butter and garlic, add chopped parsley and a glug of cream, add cooked spaghetti. My favourite home alone dinner.

You’ll need to source gluten free soy sauce and oyster sauce, but that’s easy and apart from that the recipe is gluten free and veggie since the mushrooms are coated in cornflour.

Oh my god, I’ve found my people. I didn’t think anyone loved mushrooms as much as me. My kids hate them unfortunately. I’m keeping this thread for inspiration.

Sautéed with butter and garlic on the side of steak
Creamy with pasta and pancetta
On toast with poached eggs

are my usuals.

Ooh lots of lovely ideas, I made a frittata type thing during the week. So I had something different to take to work eggs, tonnes of mushrooms onions peppers little bacon - I usually don’t add bacon though some mozzarella on top and had to try to not eat it and have some to take to work as lovely hot or cold. the cheese is optional too tbh I just had some in that needed used.

I wouldn't eat them to save my life. They are a fungus, grow in the dark and are fed a load of shit commercially. No thanks, there are so many other nice things out there.

BBC Good Food Simple Mushroom Curry. We have it at least once a fortnight. Get all the ingredients, the fennel seeds make all the difference, we buy them just for this recipe.

I dont eat farmed mushrooms. Only wild ones.
