Does anyone have a nice puff pastry chicken pot pie recipe,

Id quite like to make a chicken pot pie for a wee change to the usual beef, pork, chicken casserole, mince and tatties, cottage pie. Im getting a bit bored with it. So please, if you have a lovely recipe can you please share it with me? 😃

I make this one when I've got leftover chicken from a roast, but it's also nice with boneless skinless chicken thighs as breast is so expensive.

Thank you, I like the sound of this. Some I had seen online I didnt like the look of and really just wondered if anyone had some of there tried and tested own recipes as ive never made it before.

Is there a better alternative to the cream? Or does thst just sound bland and rank? 😆

I usually make a roux then add a drop of cream before adding to the pie mix. This avoids a thin sauce.

Ok hear me out. I use campbells mushroom soup instead of cream. Or I’ve used the chicken soup if you wanted to avoid mushrooms.

I sauté onions, (mushrooms), add chicken, garlic and peppers. A good glug of wine/ Marsala wine. Stock. Add the cambells soup.
I make my pastry separate and pop it on when serving. Or you can do it the normal way.
it’s very tasty.

You dont have to use mushrooms.
I've seen versions which use blended butter beans/cannelini beans to make it thick and creamy without cream.

That sounds really nice, you could make a roux or add a cornflour slurry to thicken, though I tend to just reduce the sauce and add a glug of cream and it turns out fine. Chicken pie is a staple in our house.

Id also echo adding a tin of Campbell condensed chicken soup - gives a rich sauce for the chicken.

Right thats it...tins of campbells soup is going in the basket.

Um Just getting fed up with food, feels the same every winter.

Ive got a pot of chilli cooking just now for nachos tonight but I made an arse of it, with the mince now being vacuum packed i thought i took 2 250g out the freezer last night, nope I took out 2 500g out so now I have chilli coming out my ears!! Nachos tonight, chilli, rice and taco shells tomorrow and I suppose i will have the rest with my son on Saturday and make something else for husband and daughter.
