Does anyone have a nice puff pastry chicken pot pie recipe,

Id quite like to make a chicken pot pie for a wee change to the usual beef, pork, chicken casserole, mince and tatties, cottage pie. Im getting a bit bored with it. So please, if you have a lovely recipe can you please share it with me? 😃

Line pie dish with pastry and prick. Chicken (leftovers is fine or thigh meat cooked), sautéed mushrooms & onion, chopped tarragon, dried oregano, creme fraiche and season. Top with puff pastry, cook 190 degrees for 20-25 minutes until golden. Works with turkey too and can add sun dried tomatoes and diced ham/gammon if you want.

I don’t follow a strict recipe but I fry off some chunks of chicken thigh with some streaky bacon. Scoop out onto a plate when golden. Fry off some chopped leeks in butter in the same pan (can add mushrooms).
Add a heaped tbs plain flour, cook out for a min or two then add some milk (about a cup. Bring to a simmer until it’s thickened and smooth then add the chicken back in along with some chicken stock and a teaspoon of English mustard. Simmer for 20 min or so til you have the right thickness of sauce (may need reducing). Add a few handfuls of spinach and stir well. Season if required. Put in suitable dish and top with pastry, bake until done.

Um Just getting fed up with food, feels the same every winter.

Ive got a pot of chilli cooking just now for nachos tonight but I made an arse of it, with the mince now being vacuum packed i thought i took 2 250g out the freezer last night, nope I took out 2 500g out so now I have chilli coming out my ears!! Nachos tonight, chilli, rice and taco shells tomorrow and I suppose i will have the rest with my son on Saturday and make something else for husband and daughter.

You can also make chilli enchiladas, chilli jacket potatoes and burritos - I put some Mexican rice in for texture. I too have found myself with a chilli mountain.

Chicken pie! This reminds me of the time I actually made a chicken pie using KFC gravy I had stuck in the freezer, and the kids said it was the best chicken pie ever 🤦‍♀️

The enchiladas sound different, i normally just make chicken ones so might give that a wee bash. I absolutely love a baked tattie with chilli and cheese, so good.

I still can't get over taking all that mince out and not realising the size difference, I will need to start looking at the labels 🤣

😆 🤣 😂 thats does sound very tasty, id be wanting chips with that version to dip into the gravy

I like the idea of adding sweetcorn in.

Add spices to make a curry?

When I’ve made too much spag bol I’ll add chilli and kidney beans for chilli then extra spices for curry so it doesn’t feel the same.

Thats a really good idea, I like keema mince and haven't had that for ages, I was thinking of the chilli enchiladas or baked potato with chilli tomorrow but now I have this in my mind 😆 🤣.

Im sure my mum used to make extra bolognaise just to turn the leftovers into chilli because my dad didnt like bolognaise or chilli so she never made it often so she killed 2 birds with the one stone to enjoy dinners that didn't involve tatties 😂

Im not a fan of sweet potato, think its about the only veg I dont like.

@Flannelfeet I love a chilli con carne cottage pie, I mash the potatoes with sour cream and chive dip, spring onions and top with lots of grated cheese and maybe a few crushed up Doritos and jalapenos, so tasty! I like to have it with salad usually to pretend it's not totally unhealthy 😅.

Both my suggestions on this thread are mash focused, probably because you mentioned mince and tatties in your OP and I've been craving it ever since (it's been added to next week's menu!)

@Flannelfeet I make it pretty much the same as my grannie, not particularly exciting I'm afraid! Soften onion and carrots, add the mince and brown off, season with celery salt, white pepper and a few pinches of mustard powder, add worcestershire sauce and beef stock, bring to the boil then turn the heat down and simmer with a lid on for as long as possible, but at least an hour. Thicken with bisto powder (not the granules!) or just cornflour.

Thats sacrilege!! 😱🤣. Brown the mince, add the onion, 2 oxo, chopped carrot, boiled water to just cover and simmer, wee dook of broon sauce then cook to the death, then bisto power or the granules 😋. Slap over the tatties 😋 😆 🤣 xx

Edit to add a load of pepper. Love pepper, i have a thing for the grinder 😆

Although I will say my OHs mum did it with brown sauce and he used to hate mince and tatties night but loves mine (I can confirm it wasn't great tbh, not saying that yours isn't!😅).

To be honest my grannie probably chucked it all in the pan at once but I've had in hammered into me from home economics that you need to soften the onion and carrots and get some colour on them before adding the mince and then they'll take on even more colour (flavour) whilst cooking, same way as when you're making a curry you need to get a good colour on your onions as it flavours the finished dish

😂😂😂 I actually remember the day I made my now husband mince and tatties and he went down the road and told his mum I was a good cook and my mince and tatties were better than hers 😆 🤣 😂. 14 years later she says I have the best gravy and buttered cabbage shes ever tasted so she won a watch with me 😆 🤣
