What are your favourite homemade soups.
I have just batch cooked:
curry parsnip soup
roasted butternut squash soup
celeriac and apple soup.
my favourite of those is curry parsnip soup.

Delia Smith is surely the soup queen. This is a great 80s video about Delia’s tomato apple and celery soup which is very easy and delicious. Contains sherry.
I would personally skip dropping in raw apple slices and piping whipped cream and chives on the top Grin but I do respect the commitment to thinking about how a soup looks when served up!

He says add half the lemon juice initially, and taste before adding the rest.... if you don't want it to take the enamel off your teeth.

Fry soffrito, garlic and a whole white diced cabbage. Wait till soft then add a can of butter beans and a can of chopped tons.

Add chicken or veg stock. Oregano, basil and Worcester sauce. Then anything spicy in you like! I have a hot Chinese chicken sauce. But you could use chilli flakes or Tabasco.

Fennel and leek soup…

chop up and sweat down in butter 2 fennels and 4 leeks…. Until really soft… add some boullion … cover with water… blend until creamy with stick blender. Season. Sooo simple yet soooo yummy!
