What are your favourite homemade soups.
I have just batch cooked:
curry parsnip soup
roasted butternut squash soup
celeriac and apple soup.
my favourite of those is curry parsnip soup.

Avgolemeno - Greek chicken, lemon, rice soup - we used to live near a Greek restaurant when I was a child and I must have had it about twice a week.

French onion soup with a cheesy crouton - will only order it out because I’m lazy and it’s too smelly to make

Broccoli and cheddar - also a childhood classic for me

I love a good Hot & Sour soup, its become our go to Sunday tea with shredded whatever roast meat we've had for lunch!

I just had hummus soup and it was wonderful (NYT recipe)
It's now my favourite.

Watercress soup

It doesn't say anything about freezing on the recipe, but I don't see why not- I've frozen actual hummus before.

I made roasted swede soup today based on the NT recipe. I left out the honey because I think it makes it too sweet. Really lovely with fresh thyme.

We adore Arabic Lentil Soup and English Creamed Onion soup.
Also use the dregs of a Thai curry to make a soup adding extra coconut milk and spices.

I have a soup maker. I've always resisted but seriously a soup maker makes the most smooth soup, that you just can't do yourself. I have been making soup all my life but nothing can beat a soup maker

Ooh, I love home made soup, and usually have a little stack of tupperwares in my freezer. I'm eating low carb at the moment, so soup is an excellent workday lunch. Favourites are:

Cauliflower cheese
Watercress
Chicken, lemon & tarragon
Chicken/turkey & veg (whenever I have a roast I make soup from the carcass)
Roasted vegetable & feta (the viral one from a few years back - oven-roast chopped tomatoes, red onion and peppers on a tray together with a block of feta and plenty of olive oil, blend with stock)

I want a soup maker now....

He says add half the lemon juice initially, and taste before adding the rest.... if you don't want it to take the enamel off your teeth.
