What is your favourite vegetable and favourite was of cooking/eating it

My favourite vegetable is artichoke. My local Italian restaurant has a vegetarian pizza with artichoke which has to be one of my favourite foods ever.
The canteen at work does stir fried artichoke as a side dish option and I make a point of eating in the canteen the days that it's on the menu which is not often enough iny opinion.

Never got round the challenge of preparing artichokes at home though. I need to have a crack at it and see if I can get the hang of it.

Anyone else want to share their favourite vegetable? Trying to eat my vegetables and get some new ideas.

Love love love artichoke. I also love Brinjals / Aubergines. My husband was away this week and I made an enormous eggplant parmigiana which I ate all week.

Love broccoli or green beans oven roasted!
Also a big fan of leeks and mushrooms in any way they’re cooked!

Leek. I love it done in cream or in butter or as soup. However it comes, really 😋.

Another artichoke fan here. I like the jarred variety in salads, on pizza or Roasted. I’m also a fan of cauliflower drizzled with a little oil and curry powder and roasted. Fennel is another regular, oven cooked daupinois-style. Love it when vegetables are the star of the show!

Agreed - very under rated veg, generally cheap and it lasts a good while - plus you can do loads with it - I like it in a stir fry.....

Cauliflower roasted until very crispy in small florets.

If you’re in London, Bocca di Lupo in Soho has a spectacular artichoke dish in the menu at the moment — deep-fried but also pickled.

Aubrrgine, roasted in slices with a smear of harissa.

Another cabbage fab here, I really don't understand why people seem to dislike it so much! Probably my favourite way to eat it is sauteed with onion and bacon 😋 I also make a delicious slow cooked buttery braised cabbage dish which is amazing, but I like it in all forms really.

I've never come across a veggie I didn't like. If only that was otherwise with bacon. There are very few savoury dishes that wouldn't be improved by adding bacon.

I go through fads.
Currently it's roasted aubergine and roasted sweet potato as part of my buda bowl.

Green beans sautéed in butter (or olive oil), salt and pepper and cooked just long enough to have colour on them but still have a bit of bite to them. Could eat them every day.

Me too.
Leafy green cabbage lightly boiled with bacon or in bubble and squeak.
White cabbage in sauerkraut or coleslaw.
Spiced red cabbage.😋

As you say, an excellent, under rated and I'll add, very pretty vegetable.🥬

Blimey your work canteen sounds dead posh! I love artichoke but usually just buy the hearts in oil from Aldi.

The globe ones you get in Italy with garlic butter are also lush.

Leeks in a cheesy sauce with roast dinner is a fave.

Roasted cauli or broccoli. I learned that on here and they are sooooo much nicer than boiled.

I also do chickpeas in the airfryer. Does that count?
