What is your favourite vegetable and favourite was of cooking/eating it

My favourite vegetable is artichoke. My local Italian restaurant has a vegetarian pizza with artichoke which has to be one of my favourite foods ever.
The canteen at work does stir fried artichoke as a side dish option and I make a point of eating in the canteen the days that it's on the menu which is not often enough iny opinion.

Never got round the challenge of preparing artichokes at home though. I need to have a crack at it and see if I can get the hang of it.

Anyone else want to share their favourite vegetable? Trying to eat my vegetables and get some new ideas.

Very fine green beans sautéed in a sort of beurre monté sauce, fine sea salt flakes sprinkled over and squeeze of lemon. I'll happily eat this as a main.

Wild ferns ('midin') stir fried with belacan, very comforting but not bland!

Runner beans. I think it stems from my very elderly neighbour when I was a child who used to walk me round his veg garden and always shared his odd shaped veg with us. Wonky carrots. Enormous marrows. Loved Uncle Len x

Pea pods straight from the field, shelled. Could live on them.

Turnip, mashed with butter and served with haggis.

Also love roasted peppers, onions and mushrooms in a baked tattie. Reminds me of when I was little and my granny was "hip" and moved away from mince and tatties.

If I had to pick one it would probably be cauliflower. Roasted, steamed, curried.
But leeks would come a close second. Or carrots.
When they are in season proper tomatoes. Sliced with a splash of balsamic, rock salt and black pepper.

Mushrooms, lightly sautéed. Love a mushroom in all forms.
Spinach and kale.
Sweetcorn which DH hates. A grilled corn on the cob is to die for - obviously with lashings of butter.
Really not a fan of root veg including potatoes.

I don’t think there are any vegetables I dislike. Maybe fennel — not too wild about the combination of aniseed and texture.

Rocket. As a salad base and in pasta. Sauté 4 cloves garlic in olive oil with a whole chile. In the meanwhile, boil some spaghetti. When spaghetti is done, drain, put in pan with olive oil, fish out chile, wilt a packet of rocket on it, and stir. Top with parmesan.

Also love Brussels sprouts, french beans, or carrots, the latter roasted with olive oil and a sprinkling of cumin seeds.

Butternut squash roasted in a curry. Or roasted with loads of garlic and some sage and onions and blended into a soup.
I have one in my fridge now actually and the only reason it hasn't already been eaten is because it's such a faff to prepare.

The best thing I have ever eaten was Jerusalem artichoke soup when we went for a posh meal.
Delicious
But have never tasted them before or after.
I like carrots!

Aubergine - either baba ghanoush or a parmigiana. I think I would happily forgo any other dip or condiment for life if I could keep a smoky baba ghanoush.

Mushrooms. In pretty much any form - soup, sautéed, in risotto or pasta, in burgers, etc etc.

My top favourite is probably aubergine, cooked in any way possible. Never met an aubergine dish I didn’t like.

I agree, and when I was a little kid, I used to live popping pea pods, and eating those raw.... so sweet.
I ate those, and then wasn't bothered if I didn't then. get my share, cooked!

Sugar snaps are so fresh and tge actually feel healthy to eat, as I'm eating them.

Oh gee, it's SO worth the wait of those slow sweated onions.
When my oh can smell me cooking those in the kitchen, I ca almost count the amount of seconds it takes to bring him into the kitchen, from anywhere in the house... it's like a magnet !!

I love most vegetables but I can’t stand cauliflower or mushrooms no matter how they’re cooked.
I used to eat roasted artichokes as a child, I haven’t had them for years but I loved them.
I cook aubergine in a few different ways, thinly sliced with olive oil, lemon and salt air fried is my current favourite way. I love courgettes too and recently made them as fritters with feta which were delicious. Rocket is lovely for salads with pomegranate and balsamic vinegar.

I love greenbeans. I steam them first and then still fry them with tiny bits of bacon. Delicious. If i can't be bothered with that i cut them small with peas and steam them, then stir in a tsp of mint sauce.
