What is your favourite vegetable and favourite was of cooking/eating it

My favourite vegetable is artichoke. My local Italian restaurant has a vegetarian pizza with artichoke which has to be one of my favourite foods ever.
The canteen at work does stir fried artichoke as a side dish option and I make a point of eating in the canteen the days that it's on the menu which is not often enough iny opinion.

Never got round the challenge of preparing artichokes at home though. I need to have a crack at it and see if I can get the hang of it.

Anyone else want to share their favourite vegetable? Trying to eat my vegetables and get some new ideas.

The descriptions or asparagus is making me remember I must get some to dip in soft boiled eggs.

Asparagus but only when they're in season here.

I like them cooked all ways. I could eat it on its own.

I get ridiculously excited when I see the signs near where i live. Asparagus for sale!

I have been trying some cabbage this week. Pretty sure I have never iny life bought cabbage before.
I have made cabbage soup and have been putting some cabbage in stir fry as well which is coming out well.
I regret not giving cabbage a chance sooner. It will definitely become a regular fixture on the shopping list

Roast tomatoes in the oven with a little oil, dried herbs, salt and pepper on.

Spinach quickly fried with masses of garlic

Leeks fried in butter or olive oil

Do potatoes count? 😂 My favourite potatoes are roast. Closely followed by chips. If potatoes don't count,I'll go for onions. Basically with nearly anything that's savoury!

I have never tried celeriac but there's been a few suggestions on here and I'm intrigued. I'm not a massive fan of raw Celery but I quite like it cooked in things. And after a quick Google and seeing how Celery-ish it tastes could anyone advise if it would be worth a go (Google says mild Celery taste but I'd rather ask actual people haha)

I love just about all of them (except okra). The one I probably eat most of is carrots - raw instead of an apple, carrot sticks with cheese and crackers or grated or finely sliced in a coleslaw. In winter, made into a soup with onion, celery, cumin, coriander, ginger and red lentils, or boiled and mashed with swede. I never let myself run out of carrots!

Yes mild, kind of a creamier earthier taste than raw celery. And delicious. Try it!

I can't pick! I'm going hmm maybe fried aubergine with tons of oil, and chilli, and greek yoghurt and mint...OR honey roast parsnips...no wait, what about those amazing roasted cauliflower one of my local independent restaurants does...I don't know!

I love veg! I do wish my kids felt the same!

i had mine to coleslaw. Either yogurt/mayo/ lemon juice or a few mustard seeds (or any other you fancy) , bit of olive oil, sugar and white wine vinegar

All of these sound delicious. I will definitely try the aubergine this week.
I haven't had roasted parsnips in ages. They need to get back on the menu.
