This is my friends recipe.
absolutely amazjng

Ramen

In a large pan add a large spoon of lemongrass paste and a spoon of miso paste
Add chicken or veg stock and soy sauce
Add sesame seeds, dry spring onion or shredded spring onions
Bring to the boil

Add soy sauce
You can get a pack of “Korean bbq” spice from Tesco- add a sprinkle or thai herbs

Add veg (and tofu here if you’re making it veggie)
I like to use Pak(Bok) Choi, shitake mushrooms, beansprouts and spring onion
Add coriander
Add chopped red chilli (the mild/medium)

Add noodles - which ever you like really

You can add some sriracha at this point and/or let people add their own at the table

A squeeze of Half a lime

Done.

We have a plate of extras on the table to add to add some crunch and flavour-
Sriracha. Soy sauce. Spring onions. Beansprouts. Sweetcorn. Red chillis. Coriander.

For the most authentic japanese ramen have a look at the recipes on Just One Cookbook. Imvho the miso that you get here is just not the same though. See if you can have a proper asian store near you for the cube shaped live miso, it should have a small vent in the lid for it to breathe. For an authentic ramen you need to make a pork bone broth, but if you make a big batch dinner is literally 10 mins till done. I like the vegetarian one with kelp and shitake.

Is it usually boiled eggs? Is fried better? I love eggs so I'm fine either way lol 😂 x

It is usually boiled but I'm lazy and prefer to use one pan lol it's equally as delicious. Kimchi goes perfectly too

Quick ramen is get a really good instant packet and add edamame, boiled egg, thin sliced spring onions and nori sprinkle.

For slow ramen agree with Just One Cookbook online or a book called Tokyo Soul Food which is my noodle bible.

Somewhere in the middle is the Tim Anderson recipe for ramen in an hour.

Also the Matsudai Ramen postal ramen kits are amazing.

https://www.marionskitchen.com/shoyu-ramen/ This Marions Kitchen ramen is lovely - it's effort but so worth it. Most elements can be done across a number of days (in bulk and frozen) reducing the effort the day of serving, and is fairly traditional.

Meera Sodhas caramelised onion chilli ramen is superb, quite alternative, but stunning. I don't like eggs, but DH does and he loves the eggs suggested for this recipe, regardless of what ramen dish I make this is the egg he gets.

For a real cheat I have loved the Marsudai Ramen kits, my fave is the Sapporo miso.

Heat sesame oil, sesame seeds, garlic, chives, ginger and soy sauce then mixed though fine noodles. Sprinkle scrambled egg and chives on top. Serve with broccoli on the side.

For an authentic ramen you need to tea stain your SOFT boiled eggs OP (chinese style) or steep in soy sauce mix Japanese style ;) tho tea eggs are everywhere in Jp
