What do you actually make with the leftovers from the famous MN roast chicken?

We usually do a roast chicken for 4 or 5 people but this week it was only the two of us so we've got some cooked leftovers.

What's a nice tried and trusted dinner recipe using cooked chicken that you use? I'm not going to do a soup this time.

Mostly chicken and gravy pie, but also chuck some into risotto or just make sandwiches for lunch the next day. Egg fried rice is another idea.

I make a cheat's chicken pie every time we roast a chicken and have leftovers.

Sauté some mushrooms in butter, make a white sauce, add chopped chicken; then roll out a couple of squares of puff pastry, bake until crispy, pop on top of sauce mix.

Risotto quite often. Or we just use it in a curry or stir fry. Sometimes I'll mix it with some peppers, beans, other veggies and spices for tacos or enchiladas. I quite often freeze it in small portions too so I can just defrost it and chuck it in when I need chicken for something. It's so much nicer than chopping up and frying raw chicken breast/thighs.

Classic recipe but so good, I make this all the time. Last night we had it as is with sun-dried tomato bread, but I also make it as a pasta bake or on top on rice!

It's a standing joke here that some people claim to make a chicken last most of the week, and others claim that there would be nothing left after one meal. Most of us are somewhere in the middle, I suspect.

I have a chicken that lasts 3 days usually.

Roast chicken
Chicken stir fry with veg or a substantial chicken/avo/tomato etc salad (depending on weather)
Chicken and veg puff pastry pie.

When I could afford the gas, I made stock and then soup. Complete no-no now, far too expensive, sadly.

Monday chicken leftover dinner is my favourite of the week. In winter I make a chicken leek and mushroom pasta bake or add some to a risotto or a curry (this recipe is really good https://hellochef.me/recipes/easy-tray-bake-curried-chicken-with-roasted-cauliflower-and-potatoes-3822

In the summer I usually add it to a pasta salad

If there's any left I often use it in a "raw stir fry salad" - chuck shredded chicken, cooked noodles, rough grated carrots and chopped spring onions in a lunch box. At lunchtime toss with some light soy sauce and sesame seeds.

Carcass for stock (which gets used in risotto or soup).

Coronation Chicken is a hugely underrated classic, especially on a baked potato. Thanks for reminding me!

Chop in to fairly large slices the following:

Banana Shallots
Portobello Mushrooms
Fennel Bulbs
Lemons
Leftover Roast Potatoes
Leftover Roast Chicken

Fry it all in a bit of oil til cooked (onions first obviously and chicken and potatoes will need less time as already cooked). Season, squeeze a bit of lemon over. Serve in a bowl with crusty French stick and butter.

And definitely make stock from the bones.

depending on the quantities:
Pie

And then boil the bones to make stock for soup.
