What do you actually make with the leftovers from the famous MN roast chicken?

We usually do a roast chicken for 4 or 5 people but this week it was only the two of us so we've got some cooked leftovers.

What's a nice tried and trusted dinner recipe using cooked chicken that you use? I'm not going to do a soup this time.

The Higgledy Pie recipe for roast chicken leftovers pie. Sometimes just reheat it with leftover gravy and make fresh roast potatoes etc. My favourite though is a roast chicken sandwich on farmhouse loaf or a baguette with stuffing, aioli, French butter, romaine lettuce, cornichons, Dijon mustard, Parmesan. Then posh expensive crisps on the side, and cloudy lemonade, and a chocolate coin if it’s Christmas.

Pies, pot pies, cobblers or savoury crumbles, all with various veg chucked in

Chicken mayo, with spring onions often, or coronation chicken for sandwiches, jacket potatoes, having with salad and so on

Sling some in with some kind of grain and peppers and cucumber for a quick lunch.

Or I have it cold with potatoes and pickle.

Thai curry (having it tonight, actually) or in biriani, lasagna, fajitas. I also freeze it and take out little portions for my borrow dog who very much appreciates it.

I loathe reheated chicken so we eat it cold in rolls for lunches and have 3 very happy cats who munch their way through the bits of skin, etc.

I do make a soup stock from the bones, but no reheated chicken. Yuk.

Sometimes we do extra roast veg and sprouts, then have cold chicken with bubble and squeak the next day.

We often do a curry, and sometimes a chicken and bacon risotto.

Carcass gets used to make stock, then I use that to make a nice chickeny soup that also includes any leftover meat.

Chicken and mushroom risotto

Chicken Supreme served with rice

Asian style broth with thinly sliced chicken, noodles, and a selection of spring onions, peppers, mushrooms, peas, broccoli etc.

I have a chicken that lasts 3 days usually.

Roast chicken
Chicken stir fry with veg or a substantial chicken/avo/tomato etc salad (depending on weather)
Chicken and veg puff pastry pie.

When I could afford the gas, I made stock and then soup. Complete no-no now, far too expensive, sadly.

How about using the haybox concept for stock?

Risotto is my go-to if I'm going to turn it into another meal but to be honest most of it goes in hot chicken gravy sandwiches for my lunch! I freeze it in sandwich size portions and just take it out of the freezer a couple of hours before lunch. I do the same with left over roast beef!

Waldorf salad - apple, celery, grapes, walnuts and chopped up cold chicken. Dressing is half mayo half yoghurt with a dab of mustard. Good thing is it doesn’t technically need the chicken so doesn’t matter if there’s not much.

Sandwiches - just with mayo or with chopped avocado and mayo/yoghurt mix.

Bones go in a freezer bag for stock when I have enough.

Taquitos! Mix your shredded cooked chicken with bought salsa and cream cheese. Add some grated cheese if you like and beat in an egg. Roll up in tortilla wraps, brush with oil, sprinkle with salt and bake for 20 minutes at 180ºc.

My kids would bite my hands off for these..!
