What do you actually make with the leftovers from the famous MN roast chicken?

We usually do a roast chicken for 4 or 5 people but this week it was only the two of us so we've got some cooked leftovers.

What's a nice tried and trusted dinner recipe using cooked chicken that you use? I'm not going to do a soup this time.

Chicken curry. :)
Fry onions, add 2 tsp curry powder, for 10 mins on gas 4. Add veg or chicken stock cubes and one mug of hot water. Add half a cup full of water to a tablespoon of plain flour & mis to a smooth paste to thicken it. Add frozen peas or fresh vegetables. Let it simmer for 15 mins.
Meanwhile make the rice and/or chips! Enjoy x

• Chicken ceasar salad

This curry...it's not hot,so DC will eat it. Mango chutney, naan bread and rice. Excellent meal.

I just do a kind of post-roast stir fry type thing. Leftover roast potatoes, extra carrots and broccoli, leftover chicken, plenty of seasoning, but if chopped parsley, chucked about in a wok type pan with some olive oil and stirred/mixxed until the potatoes are a bit crispy and the chicken is piping hot - a bit like bubble and squeak I suppose - nice and quick and really tasty?

Oh and cook up the carcass for delicious home made chicken stock

I also make a sort of sticky, Asian chicken - shred the left over chicken, add soy sauce, runny honey and Chinese five spice, then dry fry until it is dark and sticky, and serve with rice.

Just one portion of chicken and proper chips for whoever wants it.
