Left over roast potatoes - any ideas

Please . Usually I'd throw them out but it seems such a waste .

How do others use them up , I know they could just be heated and used with meat n veg again but was hoping for something a bit different.

Some of ours were air fried and eaten with Wagamama Firecracker Mayo last night

Some will get eaten as part of repeat roast tonight with leftovers

The rest are going in with the leftover lamb into a lamb curry.

why would you throw out perfectly good food :/

Could you chop them up and use them in a pie? I've been eating our cold though with mayo then complaining that I do r know where the extra weight has appeared from Grin

Chop up and fry alongside a cooked breakfast

Squash with a potato masher, bake, and use for dipping into things

Use them in soup
reheat with another meal
eat cold
slice & fry in butter or oven cook slices drizzled in olive oil & sprinkled with sea salt

The latter is a family favourite (fried in butter preferably) so used to do double roasties on a Sunday so could have them sliced & fried Mon or Tues.

Cold on a Xmas dinner sandwich. Chuck in a cold sprout, some meat and stuffing and chutney of your choice. Heaven!

Bubble and squeak with bacon and egg.
cook some cabbage, smush it all together, cook some bacon bits and mix them in. Bake it all together in the oven and serve with fried eggs

Same day they were cooked I just add a sprinkle of salt and eat with joy. Next couple of days they get cooked alongside something, either back in the oven to heat and re-crisp or fried with breakfast as a hash.

I absolutely despair. WHY would anyone usually throw them out? Ffs. Such a waste. Freeze them if you're uninspired and reheat them next time you want roast potatoes?

I'm sure that it's against the Law to throw away left over roast potatoes.

Slice and use as a topping for turkey (or any meat) hotpot.

Slice thinly and use as the bottom layer of a moussaka.

Chop and mix with left over cauliflower cheese for a quick hot lunch.

Add to stovies or thick vegetable soup or potato and leek soup.

Slice thinly and use in a frittata with other left over veg, such as peas or broccoli.
