Left over roast potatoes - any ideas

Please . Usually I'd throw them out but it seems such a waste .

How do others use them up , I know they could just be heated and used with meat n veg again but was hoping for something a bit different.

Never heard of leftover roast potatoes! The ones I hide for when I am hungry later go with literally everything will have them later with Christmas dinner two

Smash and heat up and eat with chopped raw onion and grated cheddar cheese. Delicious.

Add cooked chopped bacon and a load of cheese then grill until bubbling and golden. Serve with a dollop of sour cream if you like.

Fry up with chorizo, onion, a little chilli if you like heat and garlic, add passata. Serve with aioli.

In freezer bags then used from frozen in the soup maker ,
I did say yesterday 'any lefover potatoes leave them for the freezer' which was met by a Yeah Right face from my DS

Ds1 made us a dish with leftover roast potatoes and vegetables, with added fried onions, porcini mushrooms cream, bacon and lots of cheese mixed in, all baked in the oven.

It was lovely.

Butter in a pan, finely sliced white onion cooked until soft then add garlic, chilli the chopped up roast potatoes. Few tbs of Siracha sauce and cook until caramelised. Lovely with cod and greens.

Heat and eat with mayonnaise.

Or add leftover veg turkey and microwave. Mix it up. Bit of gravy maybe. Serve with cranberry sauce.

Just seen a reel pop up you make a shepherds pie
mince and veg then top with squashed/smashed roasted potatoes top with cheese and grill

Chop them into smaller chunks and then toss them in some harissa paste and bung them back in the oven for 25 minutes. SO good!!

Fry up all my leftovers in some butter and do bubble and squeak 😋
