Left over roast potatoes - any ideas

Please . Usually I'd throw them out but it seems such a waste .

How do others use them up , I know they could just be heated and used with meat n veg again but was hoping for something a bit different.

They do freeze really well. Pop them in a freezer bag and bung in the freezer. Reheat with a splash of oil in a hot oven for 5/10 mins.

I had a big bowl of them on the buffet today and they were one of the only bowls that had been completely emptied.

I love that The Telegraph call that recipe "roast potato ham and cheddar gratin" when we all know that it's Pan Haggerty!

But whatever you call it, it's a great way of using leftover potatoes, a real stick to your ribs dish to warm you on a bitter winter day.

This chaat is what I’m planning for my leftover roast potatoes. I’ve made it with roasted sweet potatoes before and loved it, but I think roast potatoes will be next level.

It’s bright, fresh, and bold flavours and a perfect foil for the traditional Christmas foods.

I don't think they've ever made it back to a form of reheating / recooking. Eaten straight from the fridge, while pondering making other meals with different ingredients. An aperitif of carbohydrate form. Maybe a piece of strong cheese pilfered from the cheeseboard on top if I'm feeling racy (or starved).

Slice thin to be a component of a boxing-day sandwich (can be eaten beyond boxing day)

Slice bread
Butter
Layer of leftover pigsinblankets, halved lemgthwise
Layer of leftover red cabbage
Layer of leftover turkey
Layer of sliced Roast potatoes
Layer of stilton
2nd slice bread &butter

May be eaten raw but it's easier to het your jaw around if popped into a panini press for a bit

If you don't have enough leftovers for boxingday sandwiches you didn't cook enough

Thanks everyone, who knew throwing out roasties was such a sin lol . I have learnt the error of my ways and thankyou all for the suggestions .
I think I'm going to try Christmas pie , chuck all left over pots, veg , meat in a pie dish and cover with pastry . A new leftovers meal .

There's so many threads about christmas-relatef relationships disasters that when I see this thread title in "I'm on" I parse is as "Left (my hone/spouse/relationship) (because of) roast potatoes"

Google Dishoom gunpowder potatoes. Really easy to adapt for leftover roasties. Amazing side dish with turkey curry lol. Or in a naan with Mayo.
