Other than jacket potato, is there a use for coleslaw?

I always seem to have left over coleslaw go bad after buying it to top jacket potatoes with.

What do you use coleslaw for?

You don’t actually need a food processor or grater for coleslaw, can easily donut with a sharp knife and it’s quite a satisfying job. Cut a red onion (or brown) down the middle and then cut one half into thin half moons. Cut a whit cabbage into quarters and again slice finely (might have to cut out the centre so the slices separate). Cut onion in half along the length, then lay each half flat and cut into thin slices and then batons across the width. Mix with mayo and sherry or white wine vinegar.

This thread just made me make some and I had it on sourdough brushed with olive oil and griddled. So good, thank you!
