What to do with salmon ?

I know I should eat more fish, but the only thing I can manage is breaded cod.
I do like smoked mackerel, but don’t enjoy the bones, and never quite sure what to do with it.
Please give me your easy, quick, tasty salmon recipes.

Put salmon fillets on a lined baking tray skin side down. Spread pesto over them. In preheated oven (fan 170C) for about 15 minutes. Serve with new potatoes and veg.

Salmon Spaghetti ?

1 Lemon
Chives or Dill (Whatever you prefer)
Cream
Frozen peas or mangetout
A little bit of butter or oil
Onion
Salmon ( spoked or fresh)
Spaghetti
Salt Pepper

Put the Spaghetti on to boil
Chop the onion, sweat in the oil or butter
While the onion is sweating zest and juice the lemon
Add the cream, Dill or chives, lemon juice and zest to the pan with the onion
Add a ladle of pasta after to the pan add the peas or mange tout
Add the salmon

Drain the spaghetti - add to to pan with the cream and salmon and veg

Easy microwave salmon

Put a filet of salmon in a microwavable tuppleware - add a little bit of white wine, some thinly sliced fennel, salt, pepper, a bit of butter, some chopped shallots ( from frozen is fine). Close tuppleware - put in microwave for 2 minutes. Let sit for 5 then serve with veg.

Cube up skinless salmon fillets, cover in seasoning of your choice (salt and chilli is good!). Oven cook the salmon and at the same time cook some sticky rice / sushi rice. Cut up an avocado and put it in a bowl with the rice, cooked salmon and avocado. Add some sauce (sriracha mayo is tasty!) and eat.

Salmon with soy sauce and ginger

In a ziplock bag make a marinade of soy sauce, sesame oil, grated ginger and garlic - put the filet of salmon in the ziplock and give it a massage - let it sit as long as possible but not over a day.

Take the salmon out of the marinade, pat it dry and pan fry the salmon skin side down in a very hot frying pan - as soon as you can see it is cooked hallway up the filet cover and cut off the heat - let it cook in the residual heat for 5 minutes covered.

In another pan, add the rest of the marinade, a couple of tablespoons of water and a teaspoon of honey, bring to a boil and add a little bit of cornflour slurry to make a sauce.

Serve with rice noodles, chopped spring onion and green beans.

Brush with Teriyaki marinade, put in oven for about 12 mins, serve with stir fry veg / noodles / rice. So easy but delicious and healthy.

Salmon ricotta and spinach quiche?

Line a pie dish with puff pastry and blind bake it.
While it's blind baking sweat off some onions and frozen spinach. Squeeze the water out of spinach and onions.

Beat a pot of ricotta with 3 eggs. Add the onions, the spinach, some lemon zest and juice, salt and pepper, then add some cubed raw salmon or some smoked salmon to the mixture. Tip into precooked quiche base and cook at 180°c for 30 minutes

Fry it. Properly. Gordon Ramsay style. Gorgeous and crispy
Bring to room temp. Pat fillets dry with a paper towel
Score skin with a sharp knife deep onto flesh. 1 cm apart
Salt both sides liberally and rub in
Fry skin side down in olive oil for 4-5 mins. Don't move.
Flip and fry for 4 mins.
Serve.
Perfect, crispy and tasty everytime.

Put your salmon fillet on a piece of foil. Drizzle some olive oil, salt, pepper, chili flakes and/or garlic granules on top. Coat the salmon with it on both sides. Put skin side up and wrap the foil around the fillet so it's completely covered. In the oven for about 15-20 mins or so, turning over once, or in the Air fryer on the fish setting. When done drizzle a bit of soy sauce on top. Comes out delicious.

I either have it with smashed roasted new potatoes and veg, or in pasta. Tends to be smoked salmon, chopped and cooked and then mixed with creme fraiche, parmesan, juice of half a lemon and parsley.

I go one step further with by adding a layer of grated Parmesan on top. I have also added sliced tomatoes between the pesto and cheese which was good as well

I also like combining a spoon of demerara/brown sugar, big spoon of whole grain mustard and a slurp of olive oil and spreading it on the salmon.

Another good one is to cook some onions/leeks/both and garlic, chuck a load of spinach in (I use frozen but occasionally fresh) add crème fraiche and salmon cut into chunks and lots of Parmesan and then combine with pasta. Occasionally have been known to cover the lot in a mix of Parmesan and panko breadcrumbs and bake until golden in the oven.

Can you tell I like salmon a lot?!

I bake salmon fillets in parchment, or air fryer, sometimes with pesto, sometimes with ginger and soy/teriyaki, sometimes plain and season with lemon and black pepper.

Smoked mackerel - I take it off the skin and flake it up with a fork.

Then either:
Heat a pan and place sliced tomatoes with sesame oil and balsamic vinegar till they go soft. Add spinach to wilt, mackerel to warm.
Spread onto wholemeal toast as an open sandwich.

Or:
Mixed salad, especially good with roasted sweet peppers and radish.

Wrap in tin foil with some chopped ginger and chillies and heat in oven. Super quick, easy as very tasty. Serve with anything you fancy!

Foil parcel, olive oil on the bottom so it doesn't stick, with tiny dabs of butter , salt and pepper and garlic on top, and a bit of lemon juice. 20 mins on gas mark 5 , yum.

Not what you asked I know but have you tried tuna steaks? They are probably the fish closest to meat in term of texture.

I just do a stir fry with some sauce such as sweet and sour or Teriyaki then sit the salmon fillets on top of the stir fried veg, put a lid on the pan and the salmon will simply steam until cooked which doesn't take long at all!

The absolute easiest of all is to buy Sainsbury’s steamed salmon fillets and eat them cold, straight out of the packet! Delicious with a salad or some crusty bread and an apple, for a very lazy lunch.
You can also buy ready mixed cubed fish, including salmon, cod and smoked haddock, usually sold as “fish pie mix”, which make a nice basis for home made paella if you add some seafood, peppers, garlic, tomatoes, onion, rice and lemon, seasoned with paprika (or chunks of chorizo if you’re not a purist!).

I do think I need to completely flavour the salmon, until I get used to it, so will use some of your recipes, thanks.
It looks like it’s quick to cook, which is good, as I really hate cooking an evening meal now. I must be getting old !
