What to do with salmon ?

I know I should eat more fish, but the only thing I can manage is breaded cod.
I do like smoked mackerel, but don’t enjoy the bones, and never quite sure what to do with it.
Please give me your easy, quick, tasty salmon recipes.

put salmon into bake, slice up peppers and onions and stir fry then with a little honey.
serve with microwaveable Jasmin or basmati rice and sweet chilli sauce.

Yes, but I imagine smoked salmon to taste like smoked bacon, and I don’t like that. The smoked salmon I’ve seen doesn’t look cooked to me !

Lay slices of lemon on a sheet of foil, then salmon, squeeze a lemon over salmon, add knobs of butter & more slices of lemon, sprinkle with Parsley, make foil into a parcel & cook in oven, serve with new potatoes & asparagus.

Soy sauce, garlic and honey. Mix and place salmon fillets in this to marinade. Then airfry and serve with noodles or veg. Delicious!

If you buy the smoked salmon trimmings they are useful to cook with eggs, add them to scrambled egg or mix with cream cheese and put on crackers.

Salmon parcels are easy, get some foil, grease with butter or oil, put the piece of salmon on the foil and add whatever you like, I like a slice of lemon, some chopped spring onion salt and pepper, fold the foil into a parcel, it can be baked in the oven, put in a steamer in an air fryer or on a BBQ.

Make a tomato sauce using 1 pack of passatta, a tin of drained chickpeas and whatever spices you like, a bit of chili, salt and pepper, some cumin.

Heat in a pan and once up to boil put in pieces of salmon, push them in so they are not floating on the sauce, simmer for 10 mins.

If you have any fresh herbs, coriander or parsley or even basil, add some just before serving.

If you get some boneless smoked haddock try adding it to rice in a pan with a 50/50 mix of orange juice and water.

Brush with soy sauce, top with a bit of grated ginger and sweet chilli sauce. Bake in the oven for 20-25 mins, loosely wrapped in foil if you like the fish soft or unwrapped if you like it crunchy on top

What can't you eat salmon but will be able to later? I always cook mine in a foil parcel as it contains the smell which can't really linger otherwise so either air fry or oven. Lots of marinade ideas already on the thread so don't need to repeat those. Tend to serve with baby potatoes covered in butter and salt and veg

Airfryer put in foil or baking paper a little prechopped lazy garlic and chilli salmon skin side up drizzle on oil a little more garlic chilli. Takes about 12 minutes. I like to do noodles with it when salmons cooked chuck the noodles in Airfryer for a minute to soak up the oil garlic chilli sauce. Add some soy sauce / greens to serve.

Season the salmon - I often use garlic paste or pesto - wrap in foil with sliced tomato on top and bake. The liquid from the tomato sort of steams the fish.

Noodles, stir fry veg in one pan, fry salmon skin side down in another pan, then once 3/4 cooked flip and add to the pan finely chopped fresh ginger, chilli and garlic, cook one min, add soy sauce, honey, sesame seeds and a little water. Cook further 1-2 minutes. Serve

Oh can use rice instead of noodles but obviously not as fast unless you use packaged but easy to make gluten free. If anyone reading this is vegetarian/vegan, it works well with pressed tofu too

Salmon and goat cheese quiche (large quiche, will feed 4-6 properly:

  • Shortcrust pastry in a flan dish - prick with a fork all over the bottom and blind bake for 15 mins
  • Put a single layer of parsley leaves all over the bottom of the flan case
  • break up 1-2 logs soft goat cheese and spread around the flan dish
  • break up 1-2 cooked fillets of salmon (use the cheaper ones from the tail end) and spread around
  • beat 3-4 eggs and pour over the contents of the flan and ensure they get into all the spaces
  • oven at 180° for about 20-30 mins

This comes out looking and tasting quite special and has expensive ingredients so is good for when people come round. I make it if we have three people having salmon for dinner and a four-pack of fillets so I have one extra to cook. Obviously can reduce the size by using enough ingredients to fill a different size quiche dish - because the eggs can go in one at a time, nothing needs measuring and you can adjust to what you have. I like it quite packed with good things but can be more sparse and use more eggs to fill gaps and it's still lovely.

My kids love salmon. I buy a half side and bake it in the oven in a foil parcel with lemon slices, butter, splash of white wine and seasoning. Serve with watercress.
Or cook it in filo pastry.
Another way they like it is salmon carbonara (cooked in the oven first then forked through cooked spaghetti (first add raw whisked eggs, finely grated parmesan and black pepper and a ladleful of the spaghetti cooking water).

I microwave salmon fillets, just drizzle some honey and balsamic vinegar over, 2/3 mins on med heat. Yum.

Another salmon pasta recipe is making a sauce with double cream, tomatoes (I slice baby plums) and garlic and then stirring in smoked salmon right at the end. You can also make this with raw fillets, but they need to be cooked with the sauce, or ready poached fillets. Good with short pasta like penne.

Tacos. Marinade fillets with a seasoning of choice and bake or fry before breaking into pieces. Add these to wraps with whatever else you fancy - a mix of chopped mango, tomato and avocado is nice with hot sauces and a bit of sour cream.

It’s also good in Thai curries. Cut salmon fillets into 2cmx2cm cubes and cook in the curry sauce.

Mizo glazed salmon:

2tbsp white miso paste
1tbsp soy sauce
1tbsp maple syrup
1tbsp olive oil
500g salmon

Mix together marinate and coat salmon, leave for an hour or so and then bake or air fry. Serve with egg fried rice or garlicky noodles and some sesame seeds.

Pesto parmesan salmon:
Coat a side of salmon or fillets with pesto and Sprinkle generously with parmesan and bake. I will often make this in a dish with roasted veg: cherry toms, peppers, aubergine, courgette, red onion tossed in garlic oil. Serve with rice or cous cous. You can buy bags of frozen roasted veg to make this very speedy.

I never used to eat salmon either but now love it.

Top with breadcrumbs mixed with pesto and bake. (Dh doesn't like pesto so just breadcrumbs mixed with oil and herbs for him, especially dill).

Smoked mackerel- flake and use in kedgeree.
