If you had to make 40 filled rolls.

I need to feed some volunteers, grab and go style. I'm thinking rolls, crisps, fruit and baking. I'm thinking average two rolls each. Let's say 40 to be on the safe side.

Don't want to spend an excessive amount, but do want it to be decent. Also don't want to get bogged down in faffy fillings.

What tips do you have?

What fillings and in what proportions?

Definitely vegetarians in attendance, possibly vegans. I'm not going to start taking orders.

Def give vegans and veggies first go at the spread. I've been left with nothing in the past when the meat eaters scoffed all the non meat stuff.

To be honest, I'd make all the rolls veggie. Maybe a plate of cocktail sausages or sausage rolls to avoid disappointment from carnivores....

Egg mayo
Houmous and grated carrot
Peanut butter and chopped dates
Grated cheese with pickle
Philly with chopped olives and sundried tomatoes

I'd be disappointed with that. Need more meat! But do love my salads. I find when ever I've been to buffet style things meats always gone first! Salad gets left...

OP absolutely doesn't need to go for more meat given this is a free lunch paid for out of club funds for volunteers, she has to carry it to the venue in a coolbox and can't refrigerate the rolls, and she needs to keep costs down as well as thinking about food safety.

In any event, my experience is that at most buffets with a range of food the vegetarians, vegans and people with particular food issues/requirements go for what they can eat and meanwhile the omnivores like me are trying a bit of everything, including the things that don't contain meat or fish. For this reason I would always try to make a buffet mostly vegetarian so everybody gets a chance to eat.

I’m a white-bread loving, mayonnaise-eating foodie, honest to god! But I come from a family of plain (fussy) eaters and I know that in these scenarios you play to the lowest common denominator! I’m making tagine for dinner right now, I swear 😁

Did you miss where the suggestion was there would also be white baps? Nothing depressing about wholemeal baps. We had them today, during a long walk. Husband's filled with cheese and Marmite, mine with cheese and chutney. Delicious.

The thought of being depressed by a wholemeal bap has cracked me up.

It's about time I did my shopping list so I should finalise but I still feel lost!

Keep it simple.
I’ve done similar things in the past and generally did basics like
cheese salad
ham salad
peanut butter (if nuts possible)
these days I suppose you should do something vegan, especially if no nuts are possible
bags crisps
apples
juice cartons or small bottles of water

I’d go with simple too. White rolls (not brioche).

Grated cheese
Egg mayo
Hummus and red pepper
Marmite

Assorted crisps
Apples

Then you don’t need to worry about meat getting warm in this heat.

Please remember to make some butter free!!! No one in my family takes it and when we did the sandwiches fir basketball games mine always went first as so many people don't like it!!! I hadn't realised how common it was till then!

@jocktamsonsbairn, do you mean butter, or do you mean some sort of butter-like spread, whether butter or not? And if you don't use any spread of that sort, what do you use - mayonnaise, salad cream, hummus, cream cheese, pate (vegetarian, fish or meat), cheese spread, peanut or other nut butter, nothing? I can't see how a sandwich can hold together without something spread on the bread.

Egg mayo and cress is great. just make sure you season it properly.

Cheese and pickle always get eaten.

vegan, I'd say humus with some kind of pickled pepper. jars are reasonable in Aldi.

no one likes a dry sandwich. these are all moist :)

Pav Bhaji - it’s like a mashed vegetable curry sandwich (that sounds awful but it’s lovely).

Banh mi - normal and veggie versions

Veggie Philly cheese-no-steak (fry mushrooms, peppers and onions, add cheese so it melts, fill rolls)

French dip/beef and gravy sandwiches - use a thermos for the gravy and have little takeaway dip type tubs for people to pour a serve for dipping or pouring over the roll.

Not very grab and go if you need pots of gravy is it?

As far as I can see, the main thing is to not include anything that any poster on this thread (or their DC) doesn't/don't like.
Even though it's vanishingly unlikely that they'll be there.
Afaic, hold the egg mayo as I don't like lumps of egg white. Hard-boiled egg yolk mixed with salad cream on white, buttered bread for me, please. No crusts and I prefer them cut into triangles.

Would it not be easier to just do an enormous batch of sausages, meat and veggie then have buns and mustard, ketchup. Then you only have to butter buns and leave out?

Read the thread. OP has to take all the stuff in coolboxes on her bike. There will be no electricity and no flat surfaces to faff around with mustard and ketchup. Filled rolls will be an easier solution.

Up thread a PP told me that grating carrot is really easy and safe if you have a food processor.
There was me wondering why I was using my traditional box grater. Huh. Whatever next?
