If you had to make 40 filled rolls.

I need to feed some volunteers, grab and go style. I'm thinking rolls, crisps, fruit and baking. I'm thinking average two rolls each. Let's say 40 to be on the safe side.

Don't want to spend an excessive amount, but do want it to be decent. Also don't want to get bogged down in faffy fillings.

What tips do you have?

What fillings and in what proportions?

Definitely vegetarians in attendance, possibly vegans. I'm not going to start taking orders.

Have you looked at the Morrisons food to order? The sandwiches are very reasonably priced.

I second this their sandwiches and platters are excellent and good value. Cheese platter comes with crackers etc.

Many of us hate this. Could you not leave condiments etc. on the side?

So sick of trying to buy prepacked sandwiches and every bloody one has something gross - imo admittedly - inside.

This. The struggle to find pre-made sandwiches if you don't like mayo/pickle/sauces is real.

Personally I'd do:
Hummud and falafel, or hummus and roast veg
Grated cheese
Sausage (some meat some vegan)
Tuna mayo

With cucumber and tomato slices on the side.

I’d abandon the sandwiches idea altogether and plug in a portable hob for an omelette station:
provide bowls of chopped fillings – cheese, mushrooms, peppers and so on – for these to be tailored to preference. Assuming a double socket is available plug into the other side a large fish tank filled with live crustaceans for volunteers to select lobster or crab – you can have a pot of boiling water on the go on the omelette station hob. Along with brioche rolls – you’ll need to spread with melted butter and fry but it doesn’t take long – homemade mayonnaise and some shredded iceberg, a lobster roll is really very simple. I assume someone is on hand to forage for fresh mushrooms for a vegan option – have you access to a truffle-finding pig and a forest? For fruit, strawberries are in season so three bowls: one plain, one macerated in balsamic vinegar, black pepper and shredded basil, and one with sugar. Bowls of whipped cream and vegan gloop on the side. Just keep things simple and exactly to my tastes and preferences!

If there's no refrigeration dump my suggestion of chicken. Then it's similar to @Rightnowstraightaway suggestion

  • Hummus and falafel, or hummus and roast veg or grated carrot
  • Grated cheese
  • Tuna mayo

Maybe have two containers of cocktail sausages (one meat and one vegan).

Add in fruit and cakes/flapjacks.

It is controversial!! So its best keep it to simple contents to the sandwiches- less in them the less chance there's something people will dislike.

I mean it's more likely people will gag at the inclusion of margarine than be angrily whispering to each other about the exclusion of a delicious layer a marg on the sandwiches someone else prepared for them.

Sports event - will it be a mix of sexes? Or mainly male or female?

Frankly I would cook up a load of sausages keep them warm in dishes and do sausage in a bun, ketchup and bbq sauce on the side.

Tbh If it's mainly youngster they aren't bothered about different rolls, keep it simple!

Brilliant Bussteward - like your thinking - 👍🏿☘️pandering to foibles is enabling unsocial eating behaviour - years of cricket teas which consisted of grated cheese and onion - ham cucumber - egg mayo - plain salad ( Cos lettuce etc) plus crisps and bowls of condiments went down a treat 👍🏿☘️🥒

If I was grating cheese for mass sandwich production (it goes further thus less cheese) I'd just shove it through the grater on my food processor. Probably quicker than slicing it.

Really plain and simple. The tomatoes and cucumber can be taken out if not liked thereby giving six options.

You cannot just take tomato out of a sandwich. It will have already made it mushy. It will already taste of tomato. It is impossible to remove all traces of tomato I like tomatoes, but hate them in sandwiches. Much better to keep things plain for a crowd.

From years of Cub/Brownie/Scout camps, our grab & go to lunch bar is:
pre sliced warburtons rolls (brown and white)
cheese slices (actual cheese, not induvidually wrapped plastic cheese)
ham slices
jam (with knife in the jar)
chocolate spread (also with knife in the jar)

then a bowl of fruits (apples, bananas & satsumas), box of crisps and bowl of biscuit bars (whatever is on offer at the time).

It’s not exciting or necessarily nutritionally brilliant but it’s easy and self service so reduces waste.

You leave them plain and set out an array of fillings which people can help themselves to with.
Cheese (pre sliced or grated)
Ham, turkey, beef or chicken slices
Mayo, relish
Cucumber, tomato, onion, lettuce, spinach, red pepper.

I did not expect these flights of fancy, just some consensus on whether to put pickle in the cheese rolls, how many ham and what to do for vegans. In real life, peanut butter and jam was suggested. It's a miracle it hasn't been suggested here (just about everything else has! Even tomato and onion). Does peanut butter and jam throw the cat among the pigeons?

Just keep it simple. Ham, cheese, hummus. Everyone is catered for and the more fancy you get the more chance people don't want things. Its one meal and people aren't paying for it.
Peanut butter and jam, just no. If teens/kids are volunteering I might do some jam or leave a few rolls cut and not filled so there are plain rolls for the picky and have a jar of jam out or get a few single portion jam/ marmite/ peanut butter so people can pick their own

You really need to find out your groups dietary requirements. I regularly put on events for volunteers and send out a simple survey monkey questionnaire for dietary needs - no requirements, vegetarian, vegan, any specific allergies.

There's no point in catering for 30 meat and 10 veggie options if you end up with 20 vegetarians/vegans

Other alternative is would the set up allow people to make their own? Bread, butter (dairy free, get some flora or similar), plate of sliced cheese, plate of sliced meat (chicken and ham?), bowl of lettuce, mayonnaise and a chutney. Make their own subway style, grab a packet of crisps and a cake and move on

I wouldn't like any of those. The chutney ruins a perfectly good cheese roll.

I'd stick to half rolls and half wraps.

Plain cheese suitable for vegetarians
Quorn slices of fake chicken (veggie and vegan)
Plain chicken.
Plain ham.

A bottle of mayonnaise. So those who want it can squirt it on.
A bowl of salad leaves they can help themselves if they wish.
A couple of punnets of cherry tomatoes to help themselves.

Quavers/crisps
Apples/bananas

If you're making the rolls in advance, I wouldn't add sliced tomatoes as the rolls will go soggy. Ham sandwiches are wonderful but as well as being unsuitable for vegetarians and vegans there may be religious issues for some volunteers, so I'd avoid ham. I would actually not use meat at all, to avoid the risk of running out of vegetarian options, keep costs down, minimise need to refrigerate between making and eating. I'd also avoid raw onion if you're all working at close quarters together after the lunch.

Egg mayo and cress/watercress
Grated cheese and chutney
Hummus and grated carrot, maybe a bit of shredded cabbage too for extra crunch
Maybe smoked mackerel pate and cucumber

I wouldn't like any of these. I'd be keeping it plain. Loads of people don't like chutney, mayonnaise etc. and I'd leave it to those who want it to add it because once it's added you can't take it off.

Some of these suggestions are 'interesting'.

In my opinion you might as well vomit in the sandwich as put margarine (or butter) on them. Just avoid tomato to avoid soggy - and possibly cucumber if making hours in advance.

These things ate stressful aren't they trying to cover all bases!! Apparently chicken sandwich is the most popular in the UK (where I'm presuming you are) and egg sandwiches are up there too.

However egg mayo is a right faff if making yourself - peeling all those eggs!

How about:

chicken and mayo - mix up a bowl and add a bit of black pepper or if you're feeling wild mix up chicken and stuffing with mayo. Put into sliced bread (cut into triangles as I'm also making the assumption you're not a monster).

Cheese and lettuce in white rolls (to prepare use iceberg lettuce - cut large leaves up have ready to go. Maybe get grated cheese mix up bowl with a bit of mayo and add in some spring onion if you think people are adventurous). If large baps cut into half once made.

Tuna mayo in brown baps. Make a large bowls of it using cheapest tin of tuna - cheaper than buying prepared tuna mayo

Hummus and falafel wraps - to prepare cut falafel half - spread thin layers hummus over all of a wrap (to edges as it helps hold wrap together), 2.5 falafel, lettuce leaf, roll, press and cut in half.) Replace the falafel with grated carrot if you prefer.

Ham in white rolls for the traditionalists

I read your list of everything with mayonnaise with horror until right at the end I spot you have thought of me and I can eat a good old ham sandwich and thankfully no disgusting mayonnaise. Not everyone likes it.

Def give vegans and veggies first go at the spread. I've been left with nothing in the past when the meat eaters scoffed all the non meat stuff.

To be honest, I'd make all the rolls veggie. Maybe a plate of cocktail sausages or sausage rolls to avoid disappointment from carnivores....

Egg mayo
Houmous and grated carrot
Peanut butter and chopped dates
Grated cheese with pickle
Philly with chopped olives and sundried tomatoes

Appreciate it wasn't in the OP, did not expect this level of interest, but in slightly different situations and similar crowd I've done vegan with optional cheese and there were no complaints so meat fillings will be in the minority. I doubt there will be many complaints but I would like people to be happy and to keep food waste to a minimum.
