Yep, half fried onion, head of brocolli, stock, boil for 20 minutes. Add pepper and tablespoon of Philadelphia, blitz till smooth.. lovely!

I tried it, it was... not great, cheese couldnt save it, pepper couldnt save it, we ate it all up anyway. Gave me the worst wind too.

I made the most delicious broccoli and cheddar soup recently. I wouldn't attempt it with blue cheese (dh doesn't like blue cheese) but with cheddar it was gorgeous. It was blended - I remember there was some potato in the recipe and the usual onion and garlic.

I’ve made a delicious Thai style broccoli soup. Sautéed shallot, garlic, ginger, lemongrass. Added green curry paste, broccoli, veg stock, coconut milk. Simmer till the broccoli is cooked. Blitz. Add lime juice to taste.

Roasted is nice. Same as you would for cauliflower, but not great if you burn it.

As soup it is foul. Steamed with butter is best.

I love broccoli but can't stand it in soup (and it should be against the law to have broccoli and Stilton soup on a menu). I don't get it - how can a nice vegetable be such a hideous soup?

I love a simple broccoli soup (lots of broccoli, vegetable stock, salt and pepper whizzed until smooth) served with a slice of goat’s cheese or some feta crumbled on top.

I make a broccoli and spinach soup from frozen veg and occasionally add stilton too (or any cheese).
It's very quick and easy, esp if you keep the broccoli florets and small blocks of spinach in the freezer.
The two greens go together well. Don't add cheese if you aren't keen. A swirl of cream is good, though.

Roasted broccoli is gorgeous.

Cut raw broccoli into evenly sized florets. Cut the largest florets in half across the width, if necessary.

Put some oil in a larger bowl and add some spices. My favourites are zaatar and smoked paprika, together or separate, but use whatever combos you like. Be generous. Mix well, then add the broccoli and mix until well-coated.

Spread out on a baking tray and roast until slightly browned. Takes about 20min at 180C, but you can put them in at whatever temperature you are using if you are roasting something else at the same time, just adjust how long they cook for.

Absolutely delish. Works well for cauliflower, too.

I hate it with stilton but love it with cheddar. I like broccoli and I like stilton, just don't like the combination
