Broccoli and Stilton soup ruins a good cheese.

I make soup with anything.
I don't like cheese much but would add potato, onion and chilli. Maybe some ground coriander.

I hate broccoli soup but love broccoli in all other forms.

Gorgeous roasted.
Broccoli in a cheesy sauce is amazing.
You can roughly chop, mix with pesto, add a blob of cream cheese and make it into a pasta sauce, DS loves that.
I have it in curries and a broccoli quiche is the only acceptable type of quiche.

If you have any more leftover broccoli I highly recommend roasting broccoli and serving it with a satay sauce- gorgeous!

I do Broccoli and cheese soup in the soup maker I add a potato a chicken stock cube and fry and onion too. Love it.

Have a look at Jamie Oliver's broccoli minestrone recipe, that might be more up your street. Actually, he uses broccoli in all sorts of ways, pasta, soup, quiche etc, so maybe worth you checking out.

I make charred butter broccoli soup and it's so tasty.

It's basically the process that creates the flavour. It's very sparse on ingredients.

Cut broccoli stalks off. And as much of the stalks into the florets. Trim them well at the base so no tough bits are left.

Melt butter in heavy bottomed pan and add the chopped stalks. Raise the heat to moderate and leave it to start to char a little. You want even toasted colour. This is your flavour.

Then add the rest of the broccoli, a few cups of stock, salt and pepper and cover.

When tender use a stick blender to purée it.

It's gorgeous. You can add cream and Stilton to taste if you prefer at the end before you purée.

I like broccoli soup. I think I made it most recently with a mix of broccoli, cauliflower and either onions or leeks, plus vegetable stock.

I'm very partial to a dish I invented, where I put some past on to cook, then lightly fry some sliced mushrooms, garlic and cherry tomatoes, maybe some spring onion as well, stir in broccoli florets cut smallish and turn up the heat, then when all vegetables are tender, mix with drained cooked pasta, grate on lots and lots of Parmesan, add plenty of black pepper and possibly sea salt, delicious.

Just don't eat it in the middle of an office. We had someone do this twice recently and it made them deeply unpopular. It's quite strong smelling.

I used to have a colleague who heated up cabbage soup in the microwave in the converted cupboard we had to use as a staff kitchen. It had no ventilation. She then carried it back to her office to eat. The brassica smell hung around for most of the afternoon. Envy

I live the stalk. Sliced and roasted until it's got a crunch it's Devine. It I'll eat it raw, steamed, in a soup, in a bake I prefer it to the florets!!

anyone who hates it in a b&s soup, I suggest trying it in different places, I LOVE it, but I've had a few that were disgusting.

Soup is ok. If I accidentally end up with loads I make broccoli and cheese scones. DIVINE. And they freeze well! Eat warm with salted butter 👍
