what do you do with these?
i over estimated!
no to bubble and squeak as there is no cabbage, unless i make it specifically of course

Crush them with a fork then add herbs and a little oil and warm in airfryer for 5 minutes in foil

I've fried them up and added eggs for a breakfast scramble. DEEEEEElicious.

Or I snaffle them stood up alone in the kitchen whilst I'm "washing up" after the roast dinner.

I cut them into cubes and sauté them with garlic and red onion. Or slice them and put them in a frittata.

I was laughing and telling DH about it and somehow I ended up making stir fry for a quick dinner tonight while making a big tray of roast potatoes to make into soup.

Try the recipe I shared above. Far too good to adulterate with any other veg. DH has taken a flask to work as it's so cold!
