i over estimated!
no to bubble and squeak as there is no cabbage, unless i make it specifically of course

Slice them, fry with onions and peppers, whisk some egg, pour over, grate cheese over the top and pop under the grill.

I just 'chop' them so they are a bit smaller and fry them in a little butter and oil and they do as the 'potato' part of Mondays tea! I usually do extra so I have enough for this!

Turn them intoBombay potatoes.

Or roast potato soup:
Sweat some shallots in butter, add chopped roast potatoes, add stock, cook for a few minutes to warm through and blitz. Season to taste. Finish with double cream and snipped chives.

Freeze them, you can recook from frozen in 30 mins next time you have a roast. No additional fat needed. Often better second time around!

I have never had left over roast potatoes. Ever. Doesn’t matter how many I make, my 4 dc will eat them. And then whinge that I haven’t made enough. And I never knowingly undercater.

I used to make extra just to have them cold, or hatedbup, dunked in a bit of left over gravy that I'd also make extra of.

But my OH got wind and used to scoff them when i wasnt looking so I dish them all up now and if I have left overs they are mine to do with what I want as they were on my plate.

When I'd go to family lunches they'd ask '2 or 3 roasts' and I'd be like...'erm...10?' in my defense I haven't eaten meat since 1984 so I need roast potatoes to make it worthwhile.

I'd leave them to one side to cool to go into the fridge but it's unlikely they'd make it, if they did they'd be grazed directly from the fridge cold.
