What do you do with salmon?

We like salmon as a midweek quick tea but I'm fed up of it how we currently do it (1mins each side then 10 mins in oven with either Piri Piri or honey). I'd love some creative ideas please!! Thanks

I like salmon poached or baked in a foil parcel, served warm with peas and lettuce cooked in cream, or served cold with asparagus or avocado vinaigrette.

I put pesto on the top and pine nuts.
Then I have it with a side of chilli, brocolli orzo with walnuts and Parmesan over the top!
Delicious! 😋

For posh I do salmon en croûte.

Buy puff pastry from Tesco*

Slice off pastry about 3inches wide, spread with pesto then wrap around salmon (one pack of puff pastry does 4 salmon fillets).

Bake in oven until pastry is puffed and going golden on top.

Serve with garlicky wedges, and salad or long stem broccoli, or asparagus in season. And crusty bread - load up on those carbs!!

I make a crust with panko breadcrumbs, parmesan, lemon zest and juice, parsley and olive oil. Spead over the salmon and bake. Keeps it moist and the crust is delicious. I buy the bigger cut, like 4 fillets together. Only needs about 20 mins.

Tray bake with small piles of mushrooms, asparagus tips, sliced pepper, finely sliced onion serve with cous cous.

Put in a foil parcel with spring onion, fresh herbs and a slice of lemon.

Fry then add cream and Dijon mustard to make a sauce - serve with pasta.

Cooled and flaked with salad - maybe wait until summer for that.

Cool, flake, add left over mash, form into a fish cake, serve with a raita and new potatoes with brocolli.

Can you tell I like salmon?

Just had flaked salmon over tray baked peppers, red onion, chorizo and boiled new potatoes. Ooooh my......... yum!

In my steamer. Bottom layer = baby potatoes. Middle layer - salmon, with lemon juice, dill and a bit of butter, wrapped in foil. Top layer - baby veg.
