What do you do with salmon?

We like salmon as a midweek quick tea but I'm fed up of it how we currently do it (1mins each side then 10 mins in oven with either Piri Piri or honey). I'd love some creative ideas please!! Thanks

My husband told me he didn't like couscous and Nigella/I said 'au contraire.'
He absolutely loves that recipe and would eat it once a week, if i let him!

Best thing about salmon is it makes very quick dinners :)

Very low effort dinner for us is salmon in the oven for 15 mins with a squirt of sweet chili sauce on top, served with packet cous cous and some mixed roasted veg (onions, garlic, peppers, courgette, broccoli etc).

I sometimes microwave it when I'm going to break it up rather than do fillets, usually to use it with gnocchi: saute sliced leeks and mushrooms with garlic, add in a dollop of cream cheese and grated parmesan to make the sauce, tip in the cooked gnocchi and flaked salmon. Black pepper and/or lemon to taste. Takes like 10 mins.

Roast in oven with tomatoes, broccoli, olives and anchovies or other veg eg green beans or asparagus +/- potatoes.
Pan fry or steam and serve with mash , chive butter sauce and peas or broad beans
Same but with boiled potatoes and leafy greens
Pan fry or steam and present as a salad nicoise
In pasta with peas , broccoli and crème fraiche to make a sauce.

Usually in the pan (crispy skin!)

Marinated in soy/garlic/sweet chilli and then doused in more marinade at the end of cooking to make a sticky sauce. Served with rice or noodles & stir fry veg.

Or with jerk seasoning, fried up with peppers and served with rice, salad and plantain.

I don’t like it poached (soggy) or in the oven (dry).

3 mins in the microwave with butter pepper and dried herbs, served with rice and broccoli and kale for the kids - healthy and one meal that actually goes down well (although I have the coax the protein dodger a bit)

Usually have it either baked with garlic, lemon and soy sauce with potato wedges and mushy peas (like 'fish and chips' but not fried).

Or baked with soy sauce, seasame oil, garlic and with steamed rice or noodles with a miso broth and green veg (broccoli, kale, pak choi).

Baked on a bed of couscous and Mediterranean veg (thawed frozen) with slices of lemon on top.

Pan fried with soy sauce, honey, red pepper and pak choy served with rice.

Pan fried and tossed into spaghetti with olive oil, garlic, capers, fresh parsley and lemon

Marinade for an hour in pesto, sun dried tomatoes, black olives and juice of half a lemon. Quarter the lemon and leave quarters in dish

Bake in oven for 20 minutes. Serve on rice

I think it's one I got from woman and home years ago. I actually mash my salmon then into the rice

Flake salmon and lightly fry with onions and mushrooms. Add a wide range of chopped vegetables, and boiled rice. Fry minimally until rice crisps a little. Sprinkle with illicit salt. Eat.

Stir fry in flakes with leftover veg - I flavour my stir fries with a spoonful of chutney.

Wrap in foil, add oregano and other seasoning and sliced tomatoes and pop in the oven for a bit.

In foil with peppers onions and tomatoes, and seasoning. Cook in oven for 25 mins. I usually have cous cous or new potatoes plus a salad 🥗

That one is delicious! I cook the lentils in a light stock with garlic and bay, usually. I like it with a good dollop of Greek yogurt.

Also Jamie Oliver’s classic salmon, green beans and cherry tomato traybakez

Or Rick Stein’s mirepoix of celery, leeks and carrots cooked in a bit of oil, add white wine and let it reduce, then add a cup of water and place the salmon on top, cover with a lid and steam until cooked. Serve the veg and salmon, return the liquid to the pan and add a slice of butter to make a sauce. Lovely with new potatoes.

Today like every Thursday when I'm on this 6 meals per day diet, I cook Salmon Curry with Goji Berries a small side of bulgur wheat and arugula. The curry is quite light and is basically a mix of cumin, coriander seeds, mustard seeds etc. but then the goji berries and tomato puree give it that sweetness that make it taste lovely. Then I always do an extra portion for Friday lunch :)

I also had a recipe with orange juice which was sweet and appetizing but cannot find it at the moment. Lately I have also tried salmon airfried with maple syrup and dijon mustard accompanied by air fried potatoes as well.

Mayo and pesto mix spread on top of fillets and oven roasted
