We like salmon as a midweek quick tea but I'm fed up of it how we currently do it (1mins each side then 10 mins in oven with either Piri Piri or honey). I'd love some creative ideas please!! Thanks

I fry or bake salmon in the oven. I serve it with mash, vegetables and white wine sauce.

Marinate in foil for 1 hr with soy, agave nectar, garlic granules or freaky sliced, chilli flakes on half (one dc doesn’t do spice) then bbq it at any time of year.

Or shake Cajun seasoning over, drizzle with olive oil and place lemon slices on, then straight in hot oven.

Roast it, then flake it into a simple risotto.

I just marinade the salmon fillets in some olive oil, S&P, dried herbs and some lemon juice for however long it takes to heat the oven to 180 deg fan, tray in the oven. I put the salmon on the tray skin side down and cook for 8-10 mins.
I have also done satay sauce with it and done a teriyaki marinade, both have been well received.

Lime and chilli butter!

Line a baking dish with foil. Put your salmon in with halved cherry tomatoes and empty a can of anchovies over. Bake for 15 minutes then chuck some asparagus on top and bake for a further 10 minutes

hot Salmon (steamed in microwave) in a wrap with salad, mayonnaise and sweet chilli sauce is sublime

StrictlyAFemaleFemale · 05/03/2023 20:53

www.jamieoliver.com/recipes/seafood-recipes/super-salmon-parcels-with-new-potatoes-homemade-basil-pesto/ is my favourite. My mother sniffed disapprovingly because it's Jamie Oliver and then practically inhaled it. Predictable.

Salmon - 8 mins in the air fryer / bit longer in oven, with a drizzle of sesame oil and lemon juice.

Noodles - cook / drain

Then fry mushrooms, green peppers and onions in sesame oil, then add oyster sauce, soy sauce, garlic, dried chilli flakes and Chinese 5 spice. Empty on to plate once cooked and set aside. Add noodles to same pan and heat through, then push to one side, crack in an egg and stir until almost scrambled then mix into noodles. Add the veg back to the pan and combine.

Serve with salmon on top.

I love mixing a teaspoon of pesto (aubergine is my current fave) mixed in with some philadelphia cream cheese, spread over the salmon fillet and then sprinkle with breadcrumbs/herbs. Makes such a simple tea with baby new potatoes and veggies.

Steamed, fried or oven baked.
either with a dressing of soy sauce, garlic, ginger, honey and chilli lakes
or
Mixed mayo, orange juice, parsley
all served with either cous cous, noodles, or rice with mixed steamed veg.

Remaker · 05/03/2023 21:18

We had this one last night. I leave the tomatoes out as DD doesn’t like them.
Thai red curry salmon

When avocado is in season, cook the salmon fillets In whatever way you like (we usually bbq) and serve with this Avocado salsa. My family adores this.

BoopK · 05/03/2023 21:18

Definitely going to try some ideas here

My offering
Salmon skin side down, bit of oil and salt on tray
Layer of garlic and herb philly, sprinkle of lemon zest and ground black pepper
Press in breadcrumbs
Bake for 15 mins serve with new potatoes and veg

Also flaked in pasta with thinned philly, peas and lemon and a bit of parmesan

DelilahBucket · 05/03/2023 21:24

Favourites here are Laksa, fajitas and you can have it raw or cooked in a Poke bowl..

SkankingWombat · 05/03/2023 21:57

I mostly use it to make chowder as I can easily stretch 2 fillets to the 4 of us without it feeling stingy. It's a pretty basic affair with cubes of potatoes and a tin of sweetcorn thrown in, but tasty.

Snugglemonkey · 05/03/2023 23:07

We love salmon in this house. It is most often eaten in Thai green curry with prawns, or in jerk seasoning, both with rice. Or in teriyaki/hoisin/honey chilli garlic sauce with noodles. Or with pesto (red or green) or a cream cheese and chive sauce and pasta. Or when the weather improves, I stick fillets on skewers and they are my absolute favourite BBQ food just with s/p, the natural flavours and a wee squeeze of lemon now and then as they cook. Or in risotto with lemon and asparagus. Or Cajun style. In tacos. So many ways!!!!!

I love her too and had forgotten about the lemony couscous one. I miss it! So tasty for so little effort! Dp will not thank you 🤣

Sadly I obviously didn’t cook the salmon very well when my children were young,,,they both literally took one mouthful and spat it out 👏They now only eat smoked salmon…am not a fan of salmon either!
