Veg Casserole - whats the secret ingredient to make it tasty????

thats it really, I have tried before but always a bit bland. DH is veggie so cant add meat to give it more flavour.

organic veg stock cubes
salt
pepper
fresh thyme

paprika is good, soy sauce, stock cubes, tomato puree, herbs like rosemary, sage etc, and some good strong tasting veggies also - swede is always surprisingly good IMO

sweet potato also good, because if you cook it for long enough it melts and you get a lovely velvety sauce
garlic and finely chopped onions
red lentils, again they melt and make a great nutritious texture

TBH I do cariations on a theme!!

I have a 'mediteraenan' casserole with passata, loads of herbs, garlic, peppers, courgettes etc

A 'moroccan' one with a great spice mix called Ras al Halout (A Nigella tip) cinnamon, palm syrup, and sweet potatos, butternut squash, parsnips, carrots all cut into batons.

Others include curries, chillis, etc. All with a base of onions, leeks, passata, and then chilli, curry or whatever spices.

Have a look for this brand when out and about. They have FAB mixes

oh sometimes something sharp like lemon juice or balsamic vinegar can work very well, if you have sweet veg like onions or parsnips in, for instance

just a little dash but can zing it up a bit

I agree with balsamic vinegar...I put it in everything, it really peps things up

be careful with lemon juice though, it can ruin everything. Try a bit of shredded lime zest instead (or buy dried kaffir lime leaves from a chinese supermarket, fabulous)

TBH I find a 'veggie casserole is a bit blah. You do need herbs and spices, perhaps more so than if you are doing meat
