What would you cook if alone for the evening?

Just that really. DP is out tonight. I fancy making myself a nice dinner with a glass of wine in front of the TV after the baby is in bed. What would you make?

If I'm not going to the shops - leftovers, fried rice, or I'll make white rice and fold in butter, spinach and cheese (a kind of cheat's risotto).

If I'm going to the shops anyway - surf & turf - a really nice steak with a couple of scallops fried in butter and lemon, chips and a bit of salad on the side. Something that's too expensive for multiple people so I will just treat myself!

Spinach, avocado and sunflower seed salad topped with fried halloumi and a balsamic glaze. Some lovely crusty bread and good butter

Following this thread because DH and DS are leaving me home alone for a week soon. If I don't plan and shop for some nice meals I will end up living on beans on toast.

Haha, fair enough. I'm a 'I can't be bothered to cook if it's just for me' person 😆, plus DH hates mushrooms so I save them for when he's not around!

How about an M&S ready meal? Steak and chips? Nachos and chilli?

I wouldn’t. I’d eat cereal or something out the fridge. I never go to any effort cooking if it’s just for me.

Lasagne as DP hates it but it’s my favourite meal so we rarely have it. Then I’d get a fancy eclair or something from M&S for afters….

That's my default "just me" dinner! Takes under 15 minutes, is delicious and uses ther sort of stuff we always have in.

King prawn linguine is my go to here. Fresh pasta, fresh stir fry mix, Arrabbiata sauce, everything fried off and delicious in less than ten mins providing an awesome healthy meal and maximum time to sit and drink wine 🤤 (not so healthy 🤭)

I live with three hungry men so I would cook something small and dainty just for me.

Fish and salad, or maybe roasted tomatoes on toast.

I wouldn't cook just for myself. I usually take a portion of veggie curry/lasagne out of the freezer. Otherwise I just have an omelette or a baked potato with beans and salad.
