What are you having on Monday and Tuesday for dinner?

Looking for inspiration! Hopefully avoiding slaving over the cooker for too long in the heat and also 17 weeks pregnant!

Probably stir fry tomorrow and something in the slow cooker on Tuesday.

Picnic food - hummus, celery, radishes, pitta, tsatziki, little Higgidy feta roll things etc.

Hot dogs.

Mini Milks!

I found some Thai style spicy salmon burgers in Waitrose today so will have them one night. Not sure how. Brioche buns maybe?

Never tried them but the shelves were bare today and I thought they might be nice.

I made a quiche today then ate most of it, so that's no good!

I imagine just picky bits, salads, breads, hummus etc (also 17 weeks pregnant so will be doing little and often)

We're eating like we're on holiday - lots of cured meat, cheese, olives, bread, veggie sticks & salad. Can't wait our fridge is bursting!!

On Monday - cous cous salad with feta, olives, peppers, cucumber, tomatoes, parsley etc and Italian dressing
On Tuesday - cold pasta salad with prawns, peppers, tomatoes, cucumber, cayenne and thousand island dressing.
Both very similar (and quite boring 😂)but I know the kids will eat both happily and it definitely involves barely any time over the hob for one and none for the other!

A ploughman’s

We've been having BBQ's lately. Tonight we had BBQ chicken thighs which I marinated since yesterday in garlic, sesame oil, soy sauce and lime juice. Also did Caesar salad, home made coleslaw and BBQ aubergine with feta on top.

Other BBQ things I've done lately:

• Mushrooms marinated and BBQ'd on skewers


• Mini peppers. Get cream cheese, and mix in spring onions, pepper, garlic and onion powder and fill the peppers and BBQ


• 1cm thick strips of courgette cooked, then feta sprinkled on top


• Spatchcock a chicken, marinate and BBQ


• Baked potatoes on the BBQ


• Slices of sweet potato with fresh thyme

Bolognese. Already in the fridge, just need to cook pasta.

Tuna nicoise and crusty bread. And on the other hot day we are going to throw Aberdeen Angus burgers on the BBQ and serve with salad, coleslaw and potato salad. Minimal effort

Red Thai prawn stir-fry tomorrow, but I'm working late so that won't be until about 9pm and Tuesday I've got some batch cooked 'Bolognese' (made with Turkey mince and lots of veg and herbs so quite light) in the freezer, so will microwave that, cook some spaghetti and have a side salad

@Wazzzzzuuuuuuup I've not made nicoise for ages, thanks for the reminder, I know what's on my shopping list this week now!

Cold meats, potato salad, Greek salad, cheeses, crusty bread one night. Hoping for inspiration from this thread for the other hot evening! Banking on it cooling down by Wed. Congratulations btw! Hope you manage to stay relatively cool.

Greek salad and feta/spinach pie

Tonight we had Cesar salad! Bloody lovely.

Tomorrow / Tuesday probably bolognese and then paella!

My usual fast day tomorrow. Then curry Tuesday here

Mon - spicy Chorizo style sausages with rice and chickpea salad
Tue - chicken caesar salad

All meat done on BBQ!

Tomorrow we’re having quesadillas with leftover chicken from today and cheese inside served with microwave rice and salad veg

Tuesday is packet tortellini in a pre-bought sauce with corn on the cob

And lots of ice cream 🍦

Salad, bread and cheese

Tonight we had Gwyneth Paltrow rotisserie style chicken with Italian salad and Patatas Bravas. Bit all over the place geographically.

Cold quiche and salad tomorrow. Not sure about Tuesday

I'm going to buy a rotisserie chicken and feed DS off that for a day or so, with pasta salad, salad and fruit salad. And soleros and mini twisters.

Yesterday we barbecued some chicken and had it with good bread and caesar salad.
Tonight we've had smoked salmon and prawn salad.
Tomorrow and Tuesday we have ham, cured meat, garlic flat breads, pork pie, coleslaw, roasted tomatoes, mozzarella pearls.
Wednesday there'll be leftovers of the above and I might break out the cheese and olives.

No way on God's earth am I cooking in this heat. DH is still sitting in the garden. I have more bloody work to do.

We’ve got some kebabs and koftas with salad and pittas one day and burgers the other. We had a roast chicken today with lots of salads and new pots and coleslaw.
