Looking for inspiration! Hopefully avoiding slaving over the cooker for too long in the heat and also 17 weeks pregnant!

Hot weather pasta dish:
-dice up two shallots fine, put in large bowl with balsamic vinegar and olive oil
-cut a pound of cherry tomatoes in half and put in bowl
-dump a bag of pre washed rocket on top
-roughly grate 200g of pecorino cheese on top
-bowl some fresh fettuccini for 4 minutes, drain, dump on top and mix.

Eat cold or warm. Refreshing and barely warms the kitchen.

Got a hospital appointment late on Monday so will just be pizza delivered and on Tuesday chicken curry in the slow cooker. So I don’t have to spend to long in the hot kitchen!

Absolutely no idea. Will just cook whatever we feel like. Switching the cooker on really wont make it much hotter unless I sit on top of it.........

I am going to assemble rather than cook an Asian inspired noodle dish. Have made the chicken stock and that’s in the freezer. Going to throw in noodles, mushrooms, spring onions, maybe some sugar snap peas or spinach … add a bit of chilli …. Very light and undemanding …

I've bought some vacuum packed lentils that I'm planning to mix with a load of chopped salad and feta and plonk some grilled chicken on top.

Roasting a chicken. Already have cooked new potatoes and salady bits so we will have that Monday and Tuesday might be a ramen to replenish lost salts and make the chicken go a bit further (though not as far as the mythical mumsnet chicken 😉 )

Spaghetti Bolognese (in the freezer, from batch cook pile)
Then probably chicken drumsticks with broccoli and potatoes or rice of some sort.

I'm not a fan of salad and dairy/gluten intolerant so can't even have a sandwich or cheese and crackers

Monday:

Chorizo and beef mini empanadas. Made a batch a while back and froze some. Cooked them today. They taste great at room temp so we won’t need to heat them through. With Padron peppers fried quickly in olive oil, purple radishes with butter and salt, tortilla wraps made into crisps with tzatziki dip.

Tuesday will be a massive chicken Caesar salad.

Monday will be Cajun chicken with garlic cream cheese baby potatoes and salad. Tuesday will be a Prawn Pasta salad.

But knowing me- who doesn’t cope well in heat- I’ll probably snack on crap and have zero enthusiasm to make anything substantial.

Tuesday - Bbq chipolatas and salad on the beach. Iced grapes. Swim before & after dinner.

Breakfast - ricotta, strawberries, frozen cherries, dates and pine nuts. Strong black coffee.

Lunch - gf bread, olive oil, olives, artichokes, tomatoes, cucumber. Iced coffee.

Dinner - Cold chicken roasted in garlic, chilli, lemon and marjoram from today (air fryer, so no slaving in a hot kitchen involved), rocket, balsamic roasted tomatoes, aubergine, courgette and peppers, pecorino shavings. Maybe an orange, red onion and fennel salad.

If there's enough space in the freezer, I'm thinking of making a lemon, cherry and elderflower granita for Tuesday morning. Or peach. After all, it looks like we're going to be up early. If not, it'll be watermelon and feta. And then I can make watermelon granita for wednesday.

marinaded chicken kebabs for the BBQ served with a lentil, fruit and chickpea salad and flat breads so we don’t need to cook indoors.
burgers for Tuesday, again for the BBQ, served in brioche buns with salad.

Chicken pre-marinated in mango/chilli marinade, coconut sticky rice pouch, and a sugarsnap, pea and edamame salad (all from Sainsbury's). Will make enough to have leftovers for Tues dinner. Strawberries for dessert.
