Looking for inspiration! Hopefully avoiding slaving over the cooker for too long in the heat and also 17 weeks pregnant!

I made a huge BLT pasta for lunch today so there’s plenty for tomorrow. It’s from my student days but tastes amazing. Cooked and cooled pasta, with crispy bacon chopped up, salad (lettuce, tomatoes, red onion, cucumber) and loads of Mayo and pepper. Give it a good mix and stick it in the fridge for when you need it.

Our one-dish hot weather favourites:
Greek salad (diced tomatoes, cucumber, red onion and feta)
Caprese (sliced tomatoes and mozzarella)
Panzanella (soaked bread, tomato, onion salad - sounds weird but is lovely)
Feta watermelon salad

It's lovely to be eating the kind of food that tastes best in the Mediterranean!

We've been having BBQ's lately. Tonight we had BBQ chicken thighs which I marinated since yesterday in garlic, sesame oil, soy sauce and lime juice. Also did Caesar salad, home made coleslaw and BBQ aubergine with feta on top.

Other BBQ things I've done lately:


  • Mushrooms marinated and BBQ'd on skewers

  • Mini peppers. Get cream cheese, and mix in spring onions, pepper, garlic and onion powder and fill the peppers and BBQ

  • 1cm thick strips of courgette cooked, then feta sprinkled on top

  • Spatchcock a chicken, marinate and BBQ

  • Baked potatoes on the BBQ

  • Slices of sweet potato with fresh thyme

Room for once more at your BBQ? 🤤

Tomorrow, Greek salad, pitta and cold meats.

Tuesday Quiche & salad with cold new potatoes in parsley, lemon, salt and olive oil.

Lots of melon, strawberries & solero's for during the day - roll on Thursday when it's due to be cooler!

Tomorrow I'll have some salad with leftover chicken, flatbread and maybe some rice plus lots of perinnaise

Not sure about Tuesday yet - will see how hot it gets!

Monday: crab linguine and a green salad

Tuesday: whole roast chicken (bought from the supermarket), baguette, cherry tomatoes, cucumber, garlic mayo - eaten as a picnic as we're going to see some outdoor Shakespeare, which will be fab on a warm evening as usually it's far too cold and we have to wrap up with blankets and rugs!

Chicken Caesar Salad. Pre cooked the chicken and bacon already 🙈both days. I don’t even care, it’s going to be 39/40 here. I have never in my life experienced heat like that so I’m staying out of the kitchen as much a poss. I do have a weaning dd who has no teeth and doesn’t understand salad yet 😂 so she will have a frozen batch cooked something

Leftover roast chicken
Garlic bread
Coleslaw
Jersey royals
Finely chopped salad with avocado, chickpeas, sweetcorn, apple, red onion, tomato, cucumber, celery, parsley, yellow pepper and tonnes of lemon juice.

Last night it was chicken thighs marinated with lemon, garlic and herbs and baked; tabbouleh; grilled peppers, courgette and aubergine. Tonight, cauliflower and chickpea curry, rice, nan, cucumber raita. Our kitchen is in the basement and fortunately never gets too hot.
