Getting my arse back in gear
Tomorrow: Christmas dinner (Christmas for me was cancelled for covid)
Saturday: picky bits/leftovers
Sunday: jacket spuds with leftover chilli
Monday: borlotti bean shepherds pie
Tuesday: mushroom and leek risotto
Wednesday: satay noodle stirfry
Thursday: DP sorts

The official name is “hello fresh roasted cauliflower and harissa lentil pie” which if you Google should bring up the recipe as the first result. It keeps opening in my hello fresh app. If you don’t have the app, I wonder if it will take you to the recipe page. Essentially, roast cauliflower florets in cumin until soft (about twenty mins at 200c). Make mash. Make pie filling by slicing mushrooms and frying, add garlic, harissa paste for a minute or two, add passata, cooked brown lentils and water and cook for a few minutes until thickened. Mix the cauliflower in, put the filling in a dish and top with mash. Add cheese and chives on top and bake for 15 mins until browned. We really enjoyed it. This time I’ll use dried red lentils and cook for longer with more water at that stage.

We deviated from the plan last night and made Mongolian tofu which was AMAZING and we added oyster mushrooms and stir fried carrots, here’s the recipe if anyone cares to try it

Really haven't got the love for planning or shopping at the moment abs shortages in the shops isn't helping but thought I'd give it a go tonight, so here it is:

Monday Sticky Beef Burritos (it's very quick and I'm very hungry).

Tuesday Beef Stew

Wednesday Cornish Pasty Pie - Pinch of Nom

Thursday Jacket Potatoes with cheese & beans

Friday Pizza

Saturday Chicken Chow Mein - pinch of Nom again.

Sunday - Gobi Aloo with Pliau Rice - Nadia Lim.

Just realised it's a buy beef heavy this week.

This week's menu is trying to be as easy as possible, MIL is coming to visit (she's lovely) and DH's birthday party is next weekend so trying to keep as simple as possible!

Friday - Steak, Chips and Peppercorn Sauce
Saturday - Out
Sunday - Chicken Kievs, Potatoes and Vegetables
Monday - Jambalaya and Garlic Bread
Tuesday - Sausage and Mash
Wednesday - Steak, Haggis and Neeps & Tatties
Thursday - Stuffed Peppers

Sunday: Mediterranean stuffed salmon with couscous, broccoli & green beans
Mon: Potato leek & cheese pie, veg
Tues: Going to try the Mongolian tofu recipe that @KobaniDaughters linked last week. It looks delicious Smile
Wed: Root veg tray bake with veggie sausages
Thurs Greek salad omelette, garlic baby potatoes, green salad
Fri: Veg tikka masala, onion bhajis, rice/naan

Time to freeze and defrost the two twice - sounds like annoying forward planning but it’s definitely worth it for the texture (and another reason why we meal plan!)

Will do @KobaniDaughters, it’s in the freezer now. I don’t think I’ve frozen tofu before, how long does a block take to defrost? As in could I defrost tonight, freeze again tomorrow and take out again Tuesday morning?

Not really feeling the meal plan love at the moment, don't really have headspace to plan but am trying.

Here goes...

Tonight....steak pie (homemade by our local butcher's) steamed veg, roast potatoes and gravy

Mon.... quesadillas. Just beef mince made into a taco mix then spooned on top of wraps and dry fried

Tues.... chicken fajitas

Weds.....pasta evangelists sausage Ragu

Thurs..... honey and mustard pork steaks (plain for children). Rice and brocolli

Fri....not sure yet

Sat.... shepherds pie and roasted parsnips.

I'm really struggling to meal plan atm - so glad I found this thread; they always encourage me.

MON: Chorizo casserole (Gousto recipe) and roasted cauliflower and broccoli
TUES: Macaroni cheese topped with BBQ pulled pork, carrots
WEDS: Steak and jacket potatoes, salad
THUR: Persian beef and lentil stew (gousto!), green beans
FRI: Thai red curry (also gousto) / fish fingers for DS
SAT: Homemade pizza and sweet potato wedges
SUN: Sea bass with lemon sauce, potatoes, garlic broccoli & kale
MON: Jacket potatoes with toppings (we have little pots of chili/bolognese/curry/casseroles/etc in the freezer for exactly this purpose).
TUES: Veg noodle stir fry

M- Spicy roasted coconut cauliflower with crispy new potatoes and kale from Higgidy Veg cookbook

T- Malai kofta, aloo methi and carrot pickle from a monthly kit from The Spicery

W- DH out so Egg fried rice for me

T- pizzas with charcuterie for DH and griddled veg and goats cheese for me

F- Chakchouka- no recipe, just the way a friend from Algeria taught me

Trying to stretch out the grocery shops & use what we have in already! Will need to go out for milk & bread but that should see us through till next week.

Feeling v uninspired and irritated with excessive grocery bills. So trying to make use of what's in freezer and/or do a few cheaper meals. I haven't meal planned as such but have a few things that are lurking that I will do after using last of leftover roast chicken with a butternut risotto yesterday.

Thai style chicken noodle soup
Sausages and mash
Roasted tomatoes with avocado and feta cheese on spaghetti
Roasted cauliflower and carrots with pilaf
Fishcakes

I need to come up with something for Friday where it needs to be possible for me to cook in advance AND portable as DS and DH usually eat on their way to DS' activity. Maybe a quiche.

We're away from Sunday to Wednesday for DH's birthday (thank God no meal planning and cooking!) so very simple one for this week:

Friday - Slow Cooker Curry
Saturday - Party Food
Sunday - Posh Sunday lunch out, restaurant already booked
Monday - Out, restaurant booked
Tuesday - Out, nothing booked yet
Wednesday - Spag Bol
Thursday - Fish & Chips

I normally have a monthly plan which may get tweaked if something comes up in the week so although we're away I will be trying to pull something together for the "big shop" when we get back so not much of a break!!!!
