Completely fell off the thread but trying to stay on with meal-planning, have pulled together a monthly plan which we will TRY to stick to. Next week looks like this as we're mainly using up the freezer:

Fri - Cod & Chorizo Stew
Sat - Venison & Butternut Squash Stew with broccoli
Sun - Turkey & Ham Pie with broccoli
Mon - Turkey & Ham Pie with broccoli (can you guess what I have loads of?!)
Tues - Chilli
Weds - Sprout & Salmon Pasta
Thurs - Squash & Garlic Mushroom Gnocchi

I also have loads of carrots so will make a vat of Carrot and Coriander Soup over the weekend for next week's lunches but need inspiration for the apples and oranges. I'm not a dessert person and all of the recipes I can find seem to be for sweet things, if I make a huge pot of crumble filling will it freeze in portions so that it can be a quick pudding for DH?

MilduraS · 06/01/2022 13:55

@TheOnlyMrsW This has been my go-to carrot soup since I learned to cook. I make it in batches. Will use up some oranges too.

I use the Hairy Biker blackberry crumble recipe as a base for any crumbles. I mention this because it does not require cooking the apples (or blackberries) before hand. Just chop them and add shed loads of sugar and some cinnamon! In which case, yes, if you've got an apple glut, I'd simply do that and stick in bags in the freezer!

Plantsandpuddlesuits · 06/01/2022 14:23

Here's our rough plan for the next few days, things can be switched around / frozen for a later date etc.

Tonight...fake nandos with one of those nandos sachets I wanted to do it in the oven but it says you can't put the bag in a gas oven so will just use the seasoning and wrap in tinfoil. Bit late now for slow cooker. Went for lemon and herb so that on chicken breasts with wedges for children, peri peri rice for adults and (frozen) corn on the cobs all round.

Fri... crispy chicken fajitas, spinach, peppers etc and guacamole sour cream etc

Sat.... chicken and chorizo slow cooker casserole (comes ready chopped and seasoned in a tray). Will add butternut squash possibly. Will serve with crusty bread. Or maybe mash.

Sun....shepherd's pie and steamed kale

Mon...vegan kebab pittas. Not tries vegan kebab near before but have heard good things about it. With pittas salad etc. We try to do meat free Monday

KobaniDaughters · 06/01/2022 16:05

@SpaceOp haha well we’re vegan so thankfully no massive expenses and we did have a lot of veg to get through, but it was a good excuse to go to the Japanese supermarket last night

SpaceOp · 06/01/2022 16:16

@KobaniDaughters I think I knew that but forgot. But hopefully there are still luxury vegan foods you don't normally get with the DC! (or wine?) or frankly, just enjoying time at home without childcare. I dream of someone taking my kids for a few days. Grin

KobaniDaughters · 06/01/2022 17:57

@SpaceOp yes I’m staying away from wholefoods for a reason Grin because my fav cheeses are probably the price of a half decent steak!!!

We both have tons of work on but it’s such a luxury our evening starting at 5/6pm!!

Yoyoyo1 · 06/01/2022 20:15

The peanut slow cooker curry looks lovely it doesn't seem to have any measurements for the ingredients.

Hello, delurking here - I've had great ideas from this thread (some are below!).

We don't plan for days of the week but have a list (we're pescatarian, mainly veggie at home):

Veggie (quorn) chilli with all the trimmings (use hairy bikers recipe tweaked a bit)
Greek feta tray bake (bbc food)
Bucatini w/cauliflower from A-Z of pasta (Rachel Roddy)
Coconut and kale fish curry (bbc food)
Veg burger and chips
Carrot and halloumi rice here

FrenchyQ · 10/01/2022 12:01

Monday: Tomato and fennel stew with cod loin
Tuesday: Vegan cottage pie
Wednesday: Veggie Madras with pilau rice
Thursday: Chicken tagline with cous cous
Friday: probably take away for done and husband as I'm having dental surgery so probably won't be up for cooking or eating.
