Getting my arse back in gear
Tomorrow: Christmas dinner (Christmas for me was cancelled for covid)
Saturday: picky bits/leftovers
Sunday: jacket spuds with leftover chilli
Monday: borlotti bean shepherds pie
Tuesday: mushroom and leek risotto
Wednesday: satay noodle stirfry
Thursday: DP sorts

Trialling one of those cook kit things this week, mainly to see if it engages teen DS into cooking, so we get two meals from that. They apparently do 2 people each but there’s 3 of us (DD still horrendously fussy) so I need to bulk up each one with a side dish maybe.

otherwise our meals this week probably include
borscht
stuffed marrow
cauliflower katsu curry

Leftover roast chicken for dd and I tonight as dh out for dinner.

Shepherds pie

Teriyaki Stir fry and noodles

Plaice fillets , new potatoes and veg

Pasta with tomato ,garlic and chilli

Dd birthday so she's still deciding on meal choices

Out in city for sushi

Right new term new start!

Mon.. chicken fried rice

Tues... chicken soup with leftover chicken. Bread on side

Weds...freezer meal. Fish fingers / fishcakes. Wedges and peas

Thurs...not sure yet. Probably fajitas, curry or tacos

Fri...need a quick easy tea so sausage pesto pasta and salad

Probably , but with some flexibility.

I've been doing Amazon Fresh orders - super handy as they can be done on the day and frankly, prices are closer (mostly) to Lidl than Sainsburys/Waitrose but I do them twice a week so sometimes there's stuff I can't get or whatever. Does anyone else find this?

Mon: Spaghetti and meatballs
Tuesday: Aubergine, chorizo and tomato pasta
Wednesday: Thai chicken soup and noodles
Thursday: Probably ribs but requires DH to eat with DD at her swimming lesson as don't have enough for him too!
Friday: jacket potatoes, sour cream and bacon, with salad
Saturday: butternut risotto
Sunday: spaghetti bolognaise

Yesterday was a veggie gratin , Waitrose card recipe. T'was ok but will need tweaking if I do it again.

My Ukranian guest is making chicken meatballs, mashed potato and some sort of carrot and vinegar salad. It smells and looks way better than it sounds!

@ChildsFan i use this from Vegan Japaneasy - you can do it without the mushrooms too

For the mushroom dashi:
(Makes about 350ml, plus the rehydrated mushrooms)
10 g kombu (a piece about 10cm square)
15 g dried shiitake mushrooms or 10g dried shiitake plus 5g dried porcini mushrooms
500 ml cold water
Method
To make the mushroom dashi: Place the kombu and dried mushrooms in a saucepan with the water and set over a low heat. Slowly bring the water to a very low simmer – you should just see a few little bubbles breaking the surface. Remove from the heat, then leave to infuse for at least 1 hour – it will take a while for the shiitake to fully hydrate and release their flavour into the dashi. Remove the mushrooms and squeeze them out like a sponge, then pass through a sieve and store in the refrigerator for up to one week. The mushrooms will keep in the refrigerator for about four days

Thurs: fish fingers, wedges, corn on the cob
Fri: sticky rice with garlic and chilli (green roasting tray)
Sat: spaghetti with tomato sauce (the marcella hazan one)
Sun: fish pie

Mind if I join in?

Sunday - veggie bolognaise.
Monday - veggie bolognaise again but with jacket potatoes and broccoli.
Tuesday - Thai chickpea and aubergine curry, rice.
Wednesday - gnocchi with creamy garlic mushrooms
Thursday - potential meal out otherwise squash dhal.
Friday - veggie sausage and mash.
Saturday (if needed and no leftovers), roast veg and pesto pasta.

I've also got tons of my SIL's allotment veg and apples to use up!

I live beetroot lightly roasted, dressed with balsamic and served with soft goats cheese, hazelnuts and mixed leaves

Carrots could go into a soup. Carrot and coriander is old school but lovely and appropriately autumnal

Beetroot risotto? I love roast beetroot in any form though too. Hugh FW does a couple of carrot salad type dishes, ones called Moroccan carrot blitz which is lovely, I'll try find a link.

I've always fancied, but never made, a beetroot tarte tatin. I don't like carrots, they make everything taste carroty, so no help there.

  • Spaghetti squash with pesto, parmesan and breadcrumbs
  • pasta with anchovy, olives and capers
  • salmon and pumpkin Thai red curry (Nigella)
  • leftover curry
  • toad in the hole with veggie sausages
  • maybe mushrooms with polenta (again)
