I've got a million carrots

Maybe not a million, but a lot. I thought I'd ordered 6 individual carrots but I actually ordered 6 bags.

Has anyone got any recipes to use up these carrots please?

I love grated carrot in salad so I'd grate loads, squeeze over lemon juice and put in a tub in the fridge to use for salads and sandwiches

Do you have a very sweet tooth? Indian sweets called Carrot Halwa - one is rice pudding consistency but the fudge type is more popular and lasts for ever [given that it’s 50:50 carrot / sugar]

I would cut them up and freeze

But I also like shredding carrots doing them with bbq sauce. Great in a burger

Carrot cake!
This Moroccan spiced carrot dip even better you can dip carrots into it!
Carrot falafel
Peel into ribbons for salads and stir fries
Chop with celery and onions to make sofrito for the freezer
Mash with potato/swede/parsnips either as a side or top for cottage pie.
Root veg casserole
Carrot and parsnip fritters
We got through a lot of carrots in lock down, they last longer than most veg!

Carrot and courgette muffins - think it is a Sainsbury's recipe. Freezes well, tastes nice - good with soup for lunch.

Also just grate them into things - eg bolognese or chilli. Extra vitamins and no one will notice. I do this with courgette too.

You could try pickling some for something different too. It's really quick and easy, I've done a couple of different ways, last time I think was a Nigella recipe and I've done it with both ribbons and grated carrot. I tend to have some when I have salads but I also just eat it straight out the jar too.

Carrot falafel - grate carrots and squeeze as much water as possible out of them, then bung them in the food processor with a tin of chickpeas or cannelloni beans, cumin, chilli, coriander, s and p, maybe some jalapeños if you like spice.

Roll into balls and bake - you can cook them and freeze a bunch too, or make the mix into burgers.

This easy pickled veg recipe is so delicious. I’ve tried cauliflower, radish and carrot. Carrot is my favourite with coriander seeds. Even the coriander seeds are delicious. So good with curry, in sandwiches, straight out of the jar. They last around a week or two in the fridge. And super quick to make. The other pickle recipe here looks so good too.

I love this thread.

Last time we had too many carrots I found this recipe for carrot fries so now we have them a lot but I’m itching to try some of the other recipes on this thread.

I would put my 6 to one side then grate the rest. If you freeze it in big thin slabs (around half inch thick) you can easily break off why you need for all sorts. I’ve found it freezes well enough to use for carrot salad/coleslaw not just soups and other cooked stuff.

There's an, um, unusual recipe in the current Sainsbury's magazine for carrot hot dogs - i.e. a marinated roast carrot in a hot dog roll.
