I've got a million carrots

Maybe not a million, but a lot. I thought I'd ordered 6 individual carrots but I actually ordered 6 bags.

Has anyone got any recipes to use up these carrots please?

I've frozen them before after blitzing into tiny pieces to add to celery and onion for stews etc

Definitely roast carrots. They shrink by about half so you need to cook more than you think you could possibly eat!

We had a bit of a nostalgia dinner last night that featured carrots. My Mom used to make a sort of one baking dish wonder to feed our big family with a barbeque roast dinner. Peel and slice potatoes and put in a line down a 9 x 13 baking cake pan. Grate a big bunch of carrots and place down the center. Then grate a bunch of turnip/swede and put it in a line beside the carrots to fill the pan. Cover with thinly sliced onions. Sprinkle with salt and pepper and dill. Pour about 1/4 cup melted butter over plus a bit of water. Seal with tinfoil.

We did it on the barbeque. I had forgotten how nice it tasted and it was a hit. Sounds so simple but the flavours work.

Carrots keep very well, so no need to panic about using them quickly.

Carotte rapée is a lovely carrot vinaigrette salad.

Potage Crecy, a delicious carrot soup.

Carottes à la Vichy, an easy tasty side dish.

Or dice and freeze to use with onions & celery as the base for many savoury dishes, such as bolognese sauce.

Carrot chutney. M&S do the nicest sandwich of Wensleydale with carrot chutney - it's divine... I'll take a jar off you if any goes spare!

Total tangent to the thread but please get your haemoglobin and ferritin levels checked. I crave carrots whenever I'm deficient in iron, which is stupid because they're not even high in that nutrient. It's a chronic issue for me and the first time I ever encountered the craving was during my pregnancy with DS2, but didn't make the association for years afterwards.

If you're really struggling and have a food bank near you they might be able to take some. Our local food bank has a lot of fresh food.

They will last for about a month in the fridge raw by the way! So don't feel you have to go too mental cooking or freezing them.

Carrot chutney! I had forgotten its existence. DH bought some last Christmas. It is the very best chutney ever. You have to use at least a kilo of them to make a couple of jars of it.

Dice and freeze with onions and celery - I did this a lot during lockdown when we were getting veg boxes and I always felt so smug when I took a wee bag of it out of the freezer. It's only worth getting the food processer out for it if you have tonnes but the satisfaction lasts for ages...

Anybody got a tried and tested recipe for carrot chutney? I've found one which claims to be very like the M&S version but contains no spice. To my mind, chutney needs to be sweet, sour, salty and spicy.

The Oded Schwartz I mentioned one has carrots, almonds, ginger and a bit of chilli in it. It is absolutely delicious. Should be available online

Thanks, viques! For some reason I thought you were recommending a chutney to buy- probably because I associate Schwartz with spices. Blush That looks great. I've not had almonds in chutney before. Essential, would you say?

My bad! I should have made it clearer. I put the almonds in because, well because the recipe tells me to, but I don’t think they do anything vital because you only put them in at the last minute. They add a bit of texture, but not crunch because they soften slightly in the chutney. The fresh ginger, coriander and chilli are essential though. However I use chilli flakes and a bit of ground coriander because I am lazy.

If you are ok with eating almonds and had a packet open you could stir a few into one jar before sealing and compare, but I don’t think it would make much difference, looks quite pretty though.
