I've got a million carrots

Maybe not a million, but a lot. I thought I'd ordered 6 individual carrots but I actually ordered 6 bags.

Has anyone got any recipes to use up these carrots please?

Do you have a very sweet tooth? Indian sweets called Carrot Halwa - one is rice pudding consistency but the fudge type is more popular and lasts for ever [given that it’s 50:50 carrot / sugar]

Apparently you can make it with condensed milk as well where has this been hiding?!!

Last word, if you like preserving, chutney, pickles etc get hold of his book Preserving, it is pickle porn in glorious colour, long out of print but eBay and Abe books often have copies.
