Ultimate cheese sandwich?

I’m ready to branch out from mature cheddar and Branston pickle.

What should I try instead?

Red leicester, red onion, lettuce, and a bag of ready salted crisps.

My favourite is roasted red pepper and mozzarella or goats cheese. Ideally toasted

Warm white crusty roll, real butter, spicy mango chutney and mature cheddar

Tiger bread, mature cheddar and coleslaw.

Fresh baguette, brie,basil, rocket and cranberry

Crusty bread. Brie. Bacon. Rocket. Cranberry sauce.

Tesco cheddar and jalepeno fresh baked bread with real butter and Mexicana cheese.

My favourite is a rip-off of one M&S used to do, decades ago.

Granary bread.
Mature cheddar.
Thinly sliced celery.
Mayo.

I’m not actually a fan of celery, or mayo for that matter, but a weird sort of alchemy happens and the whole thing becomes greater than the sun of its parts.

White baguette, sliced lengthways.
Thick slices of Brie.
Sliced tomato.
Grinding of black peppper and a soupçon of salt.

I’m actually drooling now.

Nice thick white bread from a bakery, not pre-sliced. Country life butter. Add grated cheese that's been mixed in a bowl with a little Mayo.

Or

Stilton and mango chutney, on thick white bloomer.

Just go with it.

I really like coleslaw and cheddar too or caramelised onion chutney and cheese but that’s probably too similar to Branson.

Cheese and cheese and onion crisps are awesome!

It's cheese on toast rather than a sandwich, grated cheese, red onion, mustard & Mayo all mixed together and then melted on top of some lovely thick granary toast

Hmm. I really have missed out.

Spicy mango chutney and cheddar sounds particularly good.

Does anyone have any thoughts on what could go with Caerphilly cheese?

I don't think mature cheddar, proper crusty bread and Spanish onion can bettered tbh

Cream cheese, sliced tomato, marmite on lightly toasted thin brown.

Cheddar, whole grain mustard, mayo, cucumber, tomato, lettuce on any sort of bread or in a pitta.

Halloumi and sweet chilli sauce or chutney in a pitta.

Mozzarella, avocado, tomato, capers and black olives in a baguette or panini.

Brie, cucumber, sliced gherkins on brown bread.

White Stilton and watercress on a light rye, use mayo instead of butter

Caerphilly cheese goes beautifully with my home made apricot chutney.
I also like mature cheddar, good butter, granary bread and my homemade damson chutney.

Crusty baguette, buttered. Wensleydale with cranberries in, sliced/crumbled into the baguette and then crispy hot streaky bacon shoved in. Warm in oven for 5 mins. Perfection!!!

I highly recommend it, but I have to make my own these days as I’m coeliac.

But I love sliced pan, cheddar and tomato too - reminds me of childhood.

How can avocado work with cheese when it’s so slimy? (Not a fan).

Thinly sliced double gloucester and english tomatoes, granary bread, one slice spread with chive cream cheese, the other with a little mayonaise.
Or for a special treat- hovis best of both, layer of cream cheese, then a mixture of grated tickler cheddar, mixed half and half with grated double gloucester and some chopped spring onions mashed with mayonnaise.
For breakfast thinly sliced medium cheddar, scraping of salted butter COLMANS mustard.
Somerset Brie with onion chutney and rocket.
Capricorn goat's cheese with chilli jam.
I could go on.
