Huge amounts of tomatoes and potatoes. Also the largest leek in the world and 3 bunches of bananas.

Any ideas what I can do with this lot?

Yes, ratatouille is easily freezable. I find that leaving it in the fridge for a day beforehand enhances the flavour.
