Huge amounts of tomatoes and potatoes. Also the largest leek in the world and 3 bunches of bananas.

Any ideas what I can do with this lot?

All lovely stuff (DM me if you are in London and looking for a good fruit and veg delivery company).

Mine had cabbage, again... No onions and fewer potatoes than I'd have liked. Yours sound much better.

I’m loving my fruit and veg box delivery, cauliflower I’d roast with Indian spices, leek I’d make cheesy leeks as a side dish with something. Bananas, eat them, carmalize them with ice cream, make into banana bread

If you can get cucumber and peppers, make gazpacho with the tomatoes. Perfect in this weather!

Cauliflower is delicious sprinkled with curry power and salt and roasted till it’s a bit black at the edges.
You can also make a think batter then coat them in semolina or polenta to make crispy cauli nuggs. V good with a blue cheese dipping sauce.

Potato salads?

And of course lockdown wouldn’t be complete without banana bread!

I’ve had a fruit and veg box delivered today from a retailer at the wholesale market
Because of lockdown they are not selling any to hotels and restaurants so are offering bespoke boxes for delivery
The leeks are the biggest I have ever seen and all the fruit and veg is really fresh and first class

Roast your tomatoes with some herbs and seasoning. Blitz when cool and you'll have a lovely soup or pasta sauce. It will freeze beautifully too.

Potatoes also make a really good soup, especially if you add some cheese

I had one last week which had so many potatoes in, there are only 3 of us so we had potatoes everyday! I made wedges, chips, roasties. In this weather though a baked potato, part done in the microwave and then finished in the oven would be amazing with tuna, salad and coleslaw. Cauliflower cheese would be nice for something different, or there are quite a few out there recipes for seasoned and baked cauli that might be worth a go.

Cauliflower in a curry. Or as previously suggested roasted.

Use tomatoes to make a vat of tomato sauce for pasta or whatever

Fresh tomatoes can be blended and used in recipes in place of tinned. And you can use leeks in recipes that normally call for onions. So that makes a lot of pasta dishes and curries possible.

Cauli- cheese bake, baked then mashed (similar to mashed potato, but much lower carbs), baked with spices

Tomato- in a salad, bruschetta, grilled with breakfast

Potato- to top cottage pie or fish pie, sliced into a dauphinoise, potato bake, rosti

leek- I use it in a cauli/broccoli bake, soup, baked with bacon as a side dish, steamed

Bananas- cake, in crepes/pancakes, on a pizza (think ham/pineapple but with banana also), baked in foil with few squares of chocolate and served with cream or ice-cream

Wish my veg box had a cauliflower in it. Jealous.

Potatoes and leek say gratin to me (did one last week). Goats cheese would be ideal but any port in a storm

Cauliflower cheese
Banana ice cream (its just pureed banana, frozen)
Slow roast the tomatoes with onions and garlic with olive oil and seasoning, then blend to make a lovely pasta sauce, and or add vegetable stock to make soup.
Leeks- fry on low heat in butter with garlic, serve with mash and sausages. Optional add fresh herb like thyme at the end.
Potatoes - I can always use potatoes, so they'd make normal wedges/mash/etc.

Cauliflower...Mmm cauliflower cheese is a must, it freezes well too if you want to make a big batch. Also good in a curry. What I like doing with cauliflower is wrapping a whole one in bacon and oven cooking- it’s fabulous I then eat it with salad.

Potatoes, jacket potatoes, roast potatoes , excellent in a curry, home made wedges ( can flavour with paprika, oregano etc)

Bananas- banana bread ( again it freezes well if you want to make one and slice for the freezer) banana pancakes, bbq bananas ( wrap in foil, poke chocolate buttons in the middle of the banana and bbq) banana ice cream. Give the dc banana & custard

Oooh, leek & potato soup.
Curried cauliflower, or how about buffalo cauliflower?
Bananas are superb if you wrap them in foil, barbecue them for ten minutes and serve with fresh cream and Tia-Maria

Tomatoes are nice just as they come or on salads, tomato and feta cheese or tomato and mozzarella.

I don't eat meat and use cauliflower as a substitute for most things . If you cook it with a stock cube it's nice on the side .. I'm running low and it's making me twitchy 😬😬

I am so surprised to see so many cauliflower fans! I can tolerate cauli cheese, but I'd rather eat dust than replace meat with it or roast a whole one covered in spices or any other weirdness Grin

It came out to about £20 for a cardboard ‘crate’ of fruit and veg (root veg, salads, fruit - all stuff we would use, nothing that has us scratching our heads!).

I do like cauliflower - but there’s so much of it! We did a bit of swapsies (I got a box for us and one for MIL) hence all the cauliflower as she doesn’t like it.

Cauliflower mash with saffron or parmesan, cauliflower rice, cauliflower dauphinoise, roast cauliflower salad with lemon, parmesan and pine nuts. 😊
