I believe am a creature of habit as I always choose a millionaire shortbread (caramel slice)

DD says I should be more adventurous.

Please note this is not a daily occurrence lol

I'd like to try making something new.

Coconut, ginger and bourbon blondies. They have grown-ups weeping with pleasure. Will post the recipe later, am still on holiday.

Following Cake

I've got a great recipe for sticky lemon fingers - a lemon shortbread Base with a sticky lemon curd type topping. Super easy but quite impressive and everyone loves them.

Also cherry oat squares. A bit like flapjacks but with flour in too so a bit less dense.

Gatekeeper we too are also eating ourcwayvthrough tgecrather lush pink whisk chocolate cake. Would be even better if thus country could make proper icing sugar. It's getting added to the repertoire.
Will try the oaty/jammy ones when the kids go back to school, as I'm hopeful they will not approved by the lunch box police.

@beela can we have that recipe, please? I've got a child who adores lemon.

Right. Update on lemon bar disaster.

Blitzed through food processor with more biscuit and set rather well overnight!

Now just have to increase quantities to make larger trays with same effort :)

Here you go:

Sticky lemon fingers
Base:
290g plain flour
70g icing sugar
pinch of salt
230g unsalted butter
lemon zest from 2 lemons

mix all ingredients together until breadcrumbs. Press it together with your hands and then press into a 33x23 baking tray lined with greaseproof paper. Bake at 170c for about 20 minutes or until golden. Remove from oven (leave oven on) and allow to cool slightly.

Topping:
210g caster sugar
3 eggs
Juice & zest of 2 large lemons

Put topping ingredients into a bowl and whisk together. Pour carefully over the baked base and return to the oven. Bake for 20 minutes or until the edges are golden. Leave to cool completely , cover and refrigerate overnight. Dust with icing sugar and cut when completely chilled.

I saw Marie Biscuits in Home Bargains the other day, I think they are like a rich tea if that helps any!

I had the most delicious traybake once in Edinburgh, it was a shortbread base with a muddle of nuts, dried fruit and caramel on top, cannot remember what it was called to google!
