I believe am a creature of habit as I always choose a millionaire shortbread (caramel slice)

DD says I should be more adventurous.

Please note this is not a daily occurrence lol

MrsHathaway - what toffees do you use for the crispies?

Supermarket own brand - in Morrisons it's the bag that's 3 for £2 or something, on the stand with sherbet lemons, American hard gums. That said, they sometimes have value brand which are a bit greasy just to eat but are great in recipes.

Either. Or into fairy cake cases (but watch timing). It's a very flexible recipe. Batter is really runny, like single cream, and surprisingly pale. But it's treacle-dark when cooked.

ladypeterwimsey how much butter do you use for the strawberry oatmeal bars? I can work ok with cup measurements but I'm not sure how much butter 'a stick' would be over here?

Does anyone have a recipe for bounty cake? We had it on holiday and it was divine. I was similar to millionaire's shortbread, but had a lovely layer of soft coconut in the middle and a chocolate-type of base.

I'm craving it so much I might have to contact the cafe where we were.

The other blogger I linked to has adapted it for Australian measurements and she uses 200g butter, as below.

•	200g cold butter, cut into pieces
•	1 1/2 cup all-purpose flour
•	1 1/2 cup oats (quick or regular)
•	1 cup brown sugar, packed firm
•	1 teaspoon baking powder
•	1/4 teaspoon salt
•	1 x 370g jar of jam of your preference, I used IXL Strawberry Conserve
1.	Preheat oven to 180 degrees, then grease and line a 20 x 30 cm lamington tin.
2.	Put all the dry ingredients in the bowl of a food processor, blitz for just a moment until everything is just combined.
3.	Add chopped butter to the mix and process until mixture resembles crumbs with large/obvious chunks, roughly the size of rice grains. Be careful not to over-process.
4.	Divide mixture in half and press one half of the mixture firmly and evenly into the bottom of the lamington tin.
5.	Heat the jam in the microwave at 50% for 40 seconds and give it a good stir. Pour gently over the crumb base and use a spoon to spread evenly.
6.	Gently tip the rest of the crumb mixture on the top of the jam and spread evenly. Using clean fingers press down as firmly as possible without destabilising the jam.
7.	Bake for 20-30 mins until brown on top. Cool in the tin and use a sharp knife to cut into squares.

I make a grown up rocky road for work sometimes.

100g milk chocolate
100g dark chocolate
3 tbsp golden syrup
135g butter
200g ginger nuts
30ml rum
Dried cranberries, sultanas, sour cherries, apricots
Jelly beans
Pack mini marshmallows

Soak the dried fruit in the rum for about an hour. Melt the chocolate and butter together. Crush the gingernuts so you have an uneven sized bag of broken biscuits. Mix all ingredients together, spread out into a lined dish, cover with icing sugar and refrigerate overnight.

I am really grateful for this thread. I bake a cake every week but bought myself a traybake tin a couple of months ago.

It is so big I am slightly scared of it and haven't used it yet! I make a lemon and poppy seed cake or lemon drizzle or something like a Victoria sponge but would love something new.

When I was baking between 50-100 servings of cake a week (don't ask!), a friend gave me this book, which has a whole traybake section. They are basically variations on all-in-one sponge cake, but all very good.

BTW have checked and it's definitely 2:3:4:6 golden syrup:butter:sugar:oats.
