Going Vegetarian

I'm seriously considering going veggie, but I'm after meal ideas to give me an idea of what can be cooked and to see if veggie food appeals to me. Right now I eat mainly chicken and only rarely eat other meat.

One of the main reasons I'm considering turning veggie is because I don't agree with the farming methods, but a side reason is I'm overweight, and I've never seen a fat vegetarian..

I have been a veggie for 20 yrs. I am not and never have been over weight, despite my love of cheese.

Delia Smith has a veggie cookbook out. There are loads of great veggie books or even non veggie books with good veggie recipes in.
I eat lentil bolognese, stirfries, curries, pizzas, pastas, cous cous etc.
There are heaps of recipes.

I wouldn't become a vegan to begin with, that limits you even more.
There is nothing wrong with a bit of cheese or egg, just don't eat it at every meal!

I hope you enjoy it if you do try it.

My DH eats meat. My 3 children eat fish but no meat or chicken. I do cook it for DH.

Good for you, giving veggetarianism ago. Try the following: my DH's recipes - I can't take credit.

Roast some veggies (red peppers, fennel, pumpkin, and throw in the pumpkin seeds) in a hot oven, slathered in olive oil and you might like to throw on some crushed garlic. Serve on quinoa, or couscous, or on salad leaves for a lighter meal.

PASTA PASTA PASTA PASTA PASTA with endless variety of veggie sauces - chunks of tomato, chllies and rocket (all uncooked, but mixed in olive oil and thrown onto cooked spagetti) - uncooked finely chopped chunks of fennel and tomato with slices of red onion, and mozzarella, with penne and parmesan on top - are two of my favourite easy pasta dishes.

Baked squash. Cut the squash in half, remove the seeds. Then slash the pumpkin flesh almost all the way through. Crush some garlic, mix with olive oil, salt and pepper and brush over. Then bake it until the squash is tender. mix together chopped spring onions, goats cheese, chopped flat parsley and chopped walnuts and spoon it into the cavity left by the seeds. Then put it back in the oven and bake it until the cheese is golden. Yummy.

Have not eaten meat for almost 20 years and never short of good meals. But I do eat lots of fish.

Indian food is also good - dhal and rice, vegetable and pusles curries.

Tinkymummy, that squash recipe sounds good. I got a squash in my veggie box this week so I might give that a go. I usually make a lasagne out of squash and ricotta cheese.

Go for it .Once you go veggie,you will learn how to cook.Your tastes will change,and you'll probably eat things you'd never considered before.
I've been a veggie for 17 years,and I love cooking,but it takes a while to make things taste good.Lots of practice ,and passion.It will open your eyes to food.Good luck.
